Cranberry Upside-Down Coffee Cake

Wow! What a beautiful and delicious coffee cake - perfect for the Christmas holiday season. I followed the batter part exactly, but for the topping I used 1/2 c. of butter, a 12 oz. bag of cranberries, 3/4 c. of nuts (you could use walnuts or pecans) and a little more than 2/3 c. of tightly packed brown sugar. I didn't bother using a saucepan to boil the butter and brown sugar, I just used a microwave safe bowl to melt the butter and then added the brown sugar. I put a cookie sheet under the foil lined spring form pan and it took a little longer to bake - about 70 minutes. I drizzled the top with melted white chocolate - mmmmmmmm.

Raisin Buttermilk Coffee Cake

Wonderful coffee cake! I cut the recipe in half and baked in an 8X8 square pan. If you want a crumbly topping, don't melt the butter as the directions state, just cut it in. I added 2 tsp. of vanilla, 1/2 tsp. of cinnamon, and 1/4 tsp. of nutmeg to the batter. Very moist and delicious!

Italian Marinated Chicken

I used half a bottle of Kraft light italian dressing, 1/4 c. of olive oil vs. veg. oil, no salt, some cracked black pepper, 3 cloves of minced garlic and added a tsp. each of basil, oregano, rosemary, and thyme. I pounded the chicken down thin and put everything in a ziploc bag and let it marinate all day. It goes great over angel hair pasta.

Tomato Vodka Sauce

Delicious! I sauteed some minced garlic along with the onion and used crushed tomatoes. I used 1/2 c. of vodka and added 1 Tbsp. of basil and 1 tsp. of oregano along with a couple of teaspoons of sugar to cut the acidity of the tomatoes. I put the parmesan right in the sauce - about 1/4 cup. It came out velvety smooth and was very rich.

Cinnamon Bread I

Maple Walnut Scones

Great scone recipe! I toasted the walnuts at 350 for ten minutes. I didn't have maple extract so I used 2 Tbsp. of pure maple syrup. I added 1/2 tsp. of cinnamon to the dry ingredients. I always freeze my butter and grate it into the flour mixture - it makes things a little easier. These came out very nice. They really don't even need the glaze, but I did one anyway: 1/2 c. confectioners' sugar, 2 Tbsp. of real maple syrup, and 1/2 tsp. of vanilla extract.

Never Fail Pie Crust II

Very easy pie crust - I cut the recipe in half and used a whole egg. I also added 1/2 tsp. of vanilla. I chilled the dough and it worked out perfectly. It was very flaky and had a great taste.

Holiday Cranberry Chutney

Cheddar Cheese Puffs

I used buttermilk baking mix instead of flour and did half with cheese and half with cooked crumbled bacon. They were light and crispy. The ones with the bacon definitely went faster.......

Maple Pumpkin Cheesecake

This cheesecake is awesome! I added 3 oz. more cream cheese and 1 tbsp. of vanilla. For the crust, I used 1 c. graham crackers and 1/4 c. chopped pecans. I made some additional "crust" to press into the sides when the cheesecake was finished. I also cooked the crust for 10 minutes at 325 and let it cool completely before adding the cream cheese/pumkin mixture. Whenever doing a cheesecake - do a waterbath. I cooked this cheesecake in a waterbath at 325 for one hour, turned the oven off and left it in there for one hour. I then chilled it overnight. Then proceeded with the maple pecan glaze. No cracks, and it was completely done and very, very rich.

Baked Garlic Green Beans

Excellent side dish - I used a steam in bag of green beans and balsamic vinegar instead of cider vinegar and I doubled the bread crumb mixture. Very easy and very good.

Fall Salad with Cranberry Vinaigrette

Excellent dressing - I used half cider vinegar and half rice wine vinegar and used 2 Tbsp. of white sugar. I also added a couple drops of red food coloring to give the dressing more of that rich red cranberry look. I used a bagged spring mix, thin sliced red delicious apples, thin sliced red onions, dried cranberies and the toatsted walnuts (350 for ten minutes).

Bread and Celery Stuffing

This is a great base - I used a pound of dried french bread and doubled the celery. I used 1/3 c. of butter and added 2 tsp. of rosemary. I also added 1 pound of pork sausage and used a little more chicken broth. I had enough stuffing to stuff a 14 pound turkey and have enough for a 9x13 casserole dish.

Bourbon Whipped Cream

Wow!!! This stuff is way too good! Everyone wanted the recipe. I cut the bourbon down to 1 tablespoon and people were licking their spoons and seeing who could come up with the most uses for this little recipe.

Brown Family's Favorite Pumpkin Pie

There aren't enough stars for this pumpkin pie! I followed the recipe exactly and added two teaspoons of vanilla extract. Everyone raved about it! The streusel topping is incredible and the pie itself makes a great presentation. I served it bourbon whipped cream from this site.

Butterhorn Rolls

Tangy Turkey and Swiss Sandwiches

Great way to use leftover turkey! I omitted the butter and just toasted the bread under the broiler. All I added was lettuce and bacon and these were delicious with chips and a dill pickle on the side!
