Middle Eastern Rice with Black Beans and Chickpeas

I followed the recipe except that I reduced the beans and stock, and cooked half the spices with the meat and the other half with the rice as per several reviewers' suggestions . It was ok. Im sure this tastes good for the recipe it is; maybe Im just not crazy about this particular spice combination--although I like Middle Eastern spicing. If I were to make it again I'd probably add raisins and some cinnamon, just to give it some contrasting flavor-- needs a little sweetness or something. I added a generous squirt of ketchup, maybe it was my attempt to add some sweetness.

Tuscan Soup

I've made this twice now, and it has come out perfect both times. I really enjoy the smooth broth and the spicy sausage. I used poultry sausage both times and I am extremely pleased with the results.

Vegetarian Tortilla Soup

Really good tortilla soup! We loved this one, and have been eating it all week. I made a couple simple changes - only 2 cans of green chilies and added some crushed red pepper. I also added about 1/3 of a cup of lime juice. Right before serving when I added the avo and cheese, I also put in some fresh cilantro. The combination of flavors made this soup truly amazing.

Apple Dumpling Cake

Loved this! The only changes I made were to add some brown sugar on top of the apples and to top the batter with cinnamon sugar. Very good! Loved the apples, they were tender and sweet and the "dumpling" part was really tasty! I will definitely make again.

Chocolate Pudding Fudge Cake

Yummy and very very chocolaty. Reduced amount of chocolate chips and didn't make the glaze as it was so rich without it, I felt it didn't need it. Mine needed to be baked a bit longer than it stated. Nice treat and very easy!

Pork Chops and Sauerkraut

almost a dead ringer for Mom's recipe...except, she added a half a bottle of beer,apples from Grandpa's orchard (whatever we had in the fruit cellar),chopped onion, and served it with homemade mashed potatoes..for some reason I remember the pressure cooker being used....(maybe that was on days she was late starting supper..!)anyway....an excellent meal and brought back wonderful dinnertime memories and smells. Like a trip into the past.....thanks

Fudge

Deliciously smooth...never quite set up like I'm used to, but tasted great enough to make up for that! I used generic store brand chips (didn't even splurge for Nestle), and didn't have any trouble with taste or waxiness. I used 2 c. milk chocolate chips with 2/3 of the butter and condensed milk called for, microwaved them together just until melted, then stirred in ~3/4 c. chopped walnuts and 1 tsp. almond extract. Poured it in a foil-lined, greased 9x9. Then microwaved together 1 c. white chocolate chips with 1/3 the butter and condensed milk called for until melted, and stirred in 1 drop red food coloring, 2 drops yellow food coloring, and 1/2 tsp orange extract. Poured it on top of the milk chocolate layer, then marbled with a knife. Everyone loved it! Can't wait to try an Almond Joy version...

Italian Wedding Soup I

Very tasty. I did make minor adjustments, added a tablespoon of chicken soup base to richen the broth. Also added onion to the soup. Cooked the orzo separate as recommended by others. Very very good!!! Will make again!

Peanut Butter and Apple Sandwich

A smash hit with my 2 year old! We love this with organic peanut butter spread on one cinnamon whole wheat Eggo waffle topped with thinly sliced apple. Then, serve it folded in half or cut into fours.

I used low fat french vanilla yogurt, 2% milk and didnt add the vanilla extract because I didnt have any on hand But this was very good my husband who claims not to like strawberries drank it up!

General Tsao's Chicken

I've made this a couple of times now and it turns out delicious. I made a lot of substitutions- used plain white vinegar, red pepper flakes, and black pepper instead of white- and it was still great. I didn't have a deep fryer either, so just used some oil in a pan and flipped the pieces halfway through. I added quite a bit of extra water to the sauce in the end because it kept thickening even with the heat off. Served it over rice. Will definitely make it again! Thanks!

Cheesy Buffalo Chicken Dip

This recipe is great. My husband loves it and will eat it as often as I make it! It is a great dip to serve guests or to bring to parties. I use 1 1/2 cups blue cheese dressing and leave out the ranch dressing and the celery and it's still delicious.

Chicken Pot Pie VII
