Chocolate Covered Blueberries

These were good. I drizzled the top with melted white chocolate chips mixed with some corn syrup. I liked the crunch of the refrigerated chocolate with the "pop" of each fresh blueberry!

Salmon with Brown Sugar Glaze

Herb Rubbed Sirloin Tip Roast

excellent!!! I halved the cayenne (for the kiddos) and used some italian seasoning instead of oregano/thyme (crushing italian seasoning in the palm of my hand before adding, as it releases fresher flavor)We also used veggie oil as hubby detests EVO. I let a 6.5# sirloin roast marinate for about 6 hours in the fridge. Added quartered potatoes, sliced onion and beef broth to pan, put roast on small rack in middle, and foil wrapped the whole thing. then roasted in 325 oven for 2.5 hrs (didn't let meat get fully to room temp b4 roasting, only sat out 30 mins) OMG it was so delicious! It made the best au jus as well! whole family devoured it, and it's rare for everyone to agree on anything! next day we sliced remaining meat thin and warmed up in au jus and it made the greatest sandwiches! tytyty for a great recipe, and tytyty for this allrecipes community for great reviews that let originally clueless cooks like me make masterpieces such as this!

Grilled Chicken Salad with Seasonal Fruit

This was sooo good! I made this salad with left-over "Yummy Honey Grilled Chicken (kabobs)" recipe from this site. It was so delicious! I made a few changes - I added diced red onion, Persian cucumbers, and chopped sugar snap peas to the salad part. I changed the dressing to reduce the sugar and oil - I used 1/3 cup red wine vinegar, 1/3 cup sugar and 1/3 c. olive oil. I added the other dressing ingredients that were called for in the original recipe. I will make this again! Great dinner for leftover grilled chicken!

To Die For Blueberry Muffins

Delicious! These are really good muffins! I chose this recipe because it called for oil as opposed to margarine. I followed the muffin ingredients to the "t"! I made a variation of the topping - using rolled oats instead of flour and light margarine (earth's balance light). This is the exact same recipe as "Easy Apple Cinnamon Muffins" from this site, only with blueberries. The batter was thick and easy to scoop up with an ice cream scooper and place into muffin cups. I reduced the temperature to 375 and baked them for about 18-20 minutes. Great recipe! (next time i might add some lemon juice or lemon zest to the batter to get more of a lemony flavor)

Strawberry Cream Freeze

We liked this dessert. I froze it in individual small plastic bowls. When it was time to serve it I popped the strawberry cream out onto individual plates and served it with a dollop of whipped cream and fresh berries.

Pesto Pizza

We liked this pizza a lot! I liked having the garlic-pesto sauce flavor as opposed to the typical tomato sauce taste! I used asparagus as opposed to mushrooms. Next time I will peel the bottom skins of the asparagus to make it more tender. It was really good and not a typical pizza.

Mushroom Burgers

These were very good! I took the advice of others and chopped the mushrooms. To the onion-mushroom mixture, I omitted the oyster sauce and added freshly chopped basil, parsley and garlic. I used instant oatmeal instead of bread crumbs. The burgers were moist and held together. I made some burgers in a frying pan and some baked in the oven at 400 for 25 minutes. Both were good!

Eat Michigan Salad

This is a nice salad. I used my submersion blender to combine the dressing ingredients. This is a very important step to avoid clumps and to have a smooth creamy dressing. I used low fat mayo and halved the dressing. There was still more than enough dressing for the salad. I left out the cheese. Good recipe.

Asparagus Snack Squares

The Very Best Confetti Rice

This was very good (with the changes/additions I made). I have made it with both jasmine rice and basmati rice. I used chicken broth to cook the rice in, add fresh garlic a little ginger and some cilantro to the dish. Very good!

Mediterranean Vegetable Stew

This was delicious! I left out the stewed tomatoes because I don't like them. I also left out the olives because i didn't have them, but I will add them in next time. I also added a couple of shakes of cumin to the vegetables and I roasted the vegetables on a cookie sheet at 450 for about 45 minutes instead of the stove top. It came out delicious!
