Strawberry Chocolate Mousse Cake

What a hit! I made this for my husbands birthday! I made a dunkin hines brownie crust on the bottom of the pans (I used one cake box to fill the bottom of 1x 8x8 square pan and one very large round spring-form pan) in order to keep the crust thin nd not to take away from the mousse, but not have it too thick. I used frozen stawberries - as it is not the season for fresh strawberries (and i made this recipe on a whim so didnt have them in the house...) It came out great!

Maple Salmon

Very Good! Instead of getting another pot dirty - i just added about 1/2 tbsp. of corn starch to the marinade and let it cook with the salmon. It thickened up and was delicious. I cooked the salmon covered with tin foil and it came out very soft and moist.

Authentic Louisiana Red Beans and Rice

I would give it 5 stars based on the aroma alone! I had to feed a lot of people and didn't have enough kidney beans to triple the recipe, so I mixed in 1 lb. black beans with 1 lb small kidney beans and 1 lb large kidney beans. Also, had to use turkey sausage (doctors' orders...). With these changes, this recipe is a 5. Without them it would probably be a 7! Thank you, Miami!

Apple Dumplings with Rich Cinnamon Sauce

Hasselback Potatoes

If you need a potato dish to dress up your dinner plate, these potatoes looked great right out of the oven. But they tasted exactly like a baked potato with butter, salt and pepper ought to taste. I guess I was hoping for more.

Mushroom Rice

This was very good - I made a couple of changes. I used olive oil instead of butter to saute the mushrooms. I used onions instead of green onions. At the end, i added both freshly chopped parsley and basil. It was very tasty.

Spiced Pears and Pomegranate

This was delicious! I used Yellow Delicious Apples instead of pears (that's what I had on hand) - but I will try it next time with the Pears. I liked the nutmeg but my kids were unfamiliar with it and didn't like it. Next time I will just leave it out. This is VERY pretty and I love using Pomegranates when they are in season!

Muffaletta Pizza

This was very good - I did modify it though. I did not use any of the deli meats - and I only the mozzarella cheese. I used Trader Joes herb Pizza dough and followed the rest of the recipe as stated. My husband and I loved it. We like the "sauceless" pizza. I make vegetable pizza quite often - but I usually top the dough with vegis and then sprinkle on the shredded cheese the last 2 minutes of baking. I really liked this recipe's method of prebaking the pizza crust and then mixing the vegis with the shredded mozzarella cheese - It was delicious! I will be making this again!

Chocolate Covered Cherry Cookies II

I was looking for a new cookie recipe for a Fall Bake sale, and thought these sounded good, so I made the recipe just about verbatim, only added a few tablespoons of cherry juice to the dough, got a nice soft dough that was surprisingly not too sticky. I used a teaspoon to make the well, used a bit of frosting to keep the cherry in place, and put the remaining icing in a ziplock bag and drizzled the cookies before baking, and according to my super critical Hubby, they are simply awesome and must be included on the Holiday Cookie List! I did only get barely 2 dozen from the original recipe, will have to double or triple that in the future, and I did as other reviewers mentioned and halved the icing recipe and still had a bit leftover. Overall, I really like this recipe, the cookie portion alone I'm going to use and play with, add chocolate chunks and such, so thanks to Jamie for a great recipe!

Fat Free Refried Beans

This was quite easy! I too used pinto beans in stead of the black beans. I sauteed an onion and garlic on low heat until translucent. I added the other ingredients including the cumin and mashed it up. I used it to fill a wrap with guacamole and shredded lettuce.

Chocolate Scotcheroos

These are really good! I have made it as written and have also used it as a "crust" for an ice cream cake. I sprayed a spring form pan with pam, spread a thin layer of the chocolate schotcheroo on the bottom, spread a layer of soft ice cream on top, placed the spring form pan in the frezzer for about 15 minutes until the layer set. I then sprinkled another layer of the chocolate schotcharoos over the ice cream and spread a second layer of a different ice cream on top. I used the remaining chocolate schotcheroo to decorate the top of the cake, placed it in the freezer for 24 hours. the cake was amazing and the chocolate schotcheroos were delicious and added a really nice crunch to the ice cream cake! yumm!!!

Microwave Caramel Popcorn

I made this recipe to the "T"!!!! Fantastic! This was so fast and so easy to make! this will be my "go-to" caramel popcorn recipe. No more with the slow oven way...! I used Smart Balance Non-Hydrogenated Margarine. It work great! I might start to cut back a little on the margarine as I make this more often. I used a Trader Joes Brown Paper Shopping Bag as my brown bag and it worked great!!!!! Make sure the caramel syrup boils for a bit in the mircowave instead of taking it too early. It needs time "cook" and get to the "soft-ball" candy stage in order for the recipe to come out as stated. After I poured the caramel onto the popcorn, i shook it a bit, but i needed to then use a spoon to get every popcorn coated. It worked great! Ty for the great recipe!!!

Pumpkin Bread IV

I made this for the first time last winter, and it has become a family tradition! I couldn't even count how many loaves I've made, for family and friends, and as soon as its gone, the kiddos start asking for more! Moist, dense, flavorful, simply scrumptious! The only thing to note is, it does take a little longer to cook in my oven as well. Well, off to bake more of this goodness up:) TYTYTY Cheryl!!
