PHILADELPHIA Pumpkin Swirl Cheesecake

Years ago I had a Philadelphia Cheesecake cookbook I used often...I sadly lost it in a move, and hadnt made a cheesecake since...My MIL asked for her old favorite, Pumpkin Cheesecake, and I was so glad to find this recipe...I changed nothing but used a Keebler crust, the big one with two extra servings and it was barely big enough, but it made it. I had never done the swirl before, and it looked and tasted great! My mother in law was thrilled and the other dinner guests loved it too, there was none left for me to take home, lol.

Cherry Pie III

I wanted to make something different for Thanksgiving, other than my traditional Pumpkin, Apple and Pecan Pies, so after researching recipes, decided on this one. I read a lot of the reviews, and boy were they helpful. I used 3 cans of Oregon Sour cherries, and could have used one more probably...accidentally put in a tablespoon more cornstarch and my 5 year old added a tablespoon more butter, lol, she likes butter...and it turned out fabulous!! I confess, I used a Publix crust, have ZERO counterspace for rolling anything out, lol...For my first from scratch (mostly) Cherry pie, it was a big hit, the first dessert (from a whole bunch) gone, and I had a dozen requests for the recipe! This recipe is foolproof, and is going in my permanent recipe box!

Grandma's Green Bean Casserole

MIL asked me to bring the greenbean casserole for Thanksgiving, so I thought I'd give this a try. I read the other reviews, and made a few modifications...mixed in a cup of the cheese with the beans and sour cream...sauteed the onion and a handful of chopped baby portabellos...mixed crushed ritz with some french fried onions for the topping...and it was a huge hit! All the family loved it, said they want it for Christmas dinner too! Oh, and I made the casserole on Tuesday night, without baking, stuck it the fridge till thursday and baked it 35 minutes, it was great! I give the recipe 5 stars, even with my modifications, because without the base recipe, I'd have had nothing to play with!

OMG! this turned out just wonderful. I added one extra can of college in soup and put in 2 pds of bay scallops instead of 1 1/2. This receipe served 10 people. Just fantastic, everyone loved it.

Delicious! I left out the pecans in the crumble topping and used oil instead of the butter. I made doubled the fruit and made 5x the topping (reduced the oil/butter).

Apple Crisp

This was very good! I increased the serving size to make 8+ servings. It was quick to make and a big hit! I used about 1/4 cup of oil inplace of the butter and the crumble topping remained crisp! I will be making this again!

Cake Balls

My kids had a blast helping me make these! I let the cake cool. Then broke it up and placed it in my kitchen aid along with the container of Dunkin Hines chocolate frosting. The mixture was very sticky, but i wet my hands (kind of like the way I do it for meatballs) in order to shape the cake balls. I placed them on a cookie sheet and froze them for 2 hours. Each kid had a job. One placed the cake ball into the wok of melted chocolate, I swirled it around and took it our with 2 forks and the the other 3 kids took turns with the sprinkles. We had a lot of fun! I served the cake balls frozen and they were delicious!

Strawberry Chocolate Mousse Cake

This turned out really nice! I made this for my husbands birthday! I made a dunkin hines brownie crust on the bottom of the pans (I used one cake box to fill the bottom of 1x 8x8 square pan and one very large round spring-form pan) in order to keep the crust thin nd not to take away from the mousse, but not have it too thick. I used frozen strawberries - as it is not the season for fresh strawberries (and i made this recipe on a whim so didnt have them in the house...) I thought the mouse tasted a bit grainy. I prefer "Polly Welby's Excellent Chocolate Mousse" from this site which is quite similar to this mousse recipe, but less ingredients/less steps. I will make this again - but with the mousse recipe I prefer.

Maple Salmon

Very Good! Instead of getting another pot dirty - i just added about 1/2 tbsp. of corn starch to the marinade and let it cook with the salmon. It thickened up and was delicious. I cooked the salmon covered with tin foil and it came out very soft and moist.

Authentic Louisiana Red Beans and Rice

I would give it 5 stars based on the aroma alone! I had to feed a lot of people and didn't have enough kidney beans to triple the recipe, so I mixed in 1 lb. black beans with 1 lb small kidney beans and 1 lb large kidney beans. Also, had to use turkey sausage (doctors' orders...). With these changes, this recipe is a 5. Without them it would probably be a 7! Thank you, Miami!

Hasselback Potatoes

If you need a potato dish to dress up your dinner plate, these potatoes looked great right out of the oven. But they tasted exactly like a baked potato with butter, salt and pepper ought to taste. I guess I was hoping for more.

Mushroom Rice

This was very good - I made a couple of changes. I used olive oil instead of butter to saute the mushrooms. I used onions instead of green onions. At the end, i added both freshly chopped parsley and basil. It was very tasty.

Spiced Pears and Pomegranate

This was delicious! I used Yellow Delicious Apples instead of pears (that's what I had on hand) - but I will try it next time with the Pears. I liked the nutmeg but my kids were unfamiliar with it and didn't like it. Next time I will just leave it out. This is VERY pretty and I love using Pomegranates when they are in season!
