Delicious Black Bean Burritos

Mmm muy delicioso! I've been craving Mexican lately (actually I'm always cravin Mexican) and everyone agreed that these hit the spot! I was wary of the cream cheese but didn't taste it. I added one diced tomato, a can corn kernels and a sprinkle of cumin. YUM! =)

LOVE these! My only stray from the recipe was using mozzarella cheese in place of the Italian cheese blend (<- didn't have any). I love when something looks fancy and complicated but was actually simple to prepare!! Deelish ~ thanks Anita! =)

Vegetarian Korma

Mmm I liked this!! My Indian friends' mothers all mix curry in earlier in their recipes, so I added it with the onion to the skillet. I also replaced the heavy cream with coconut milk. Everyone enjoyed- thanks!! :)

Mmm these are awesome! I grated the potato so that they were the same consistency as the onion- made for a very tasty latke! I used olive oil instead on peanut- soo good! =)

Authentic Kicked-Up Syrian Hummus

Having a Syrian grandfather I was so excited to find this recipe! I'm allergic to sesame/tehinah so I added a tbs of mayo and extra evoo. Also I think I need to reduce the garlic next time (probably too strong b/c no tahinah)

No one believed that I baked this...it's a 5-star bakery cake!! Followed another reviewer's tip and added a Tbsp of instant coffee to the water for a more authentic coffee cake taste...deeeelish! =)

Zucchini Patties

Shepherd's Pie VI

I thought this Shepherd's Pie was really good, delicious even - but I had a hard time mashing the potatoes myself without the necessary tools, so my hands were aching at the end and the top layer of the pie was lumpy. It took much longer than an hour to prepare and cook, too. Also, I seasoned the meat with some Adobo and Oregano. I will try it again in the future, though. :)

Spinach Stuffed Chicken Breasts

I couldn't believe that it came out looking okay, I'd been nervous about 'butterflying' chicken (it sounds fancy!). Tasted pretty good too- I replaced the bacon with prosciutto and omitted the mayo (not a healthy recipe at all so I tried to ease the caloric blow...).
