Chocolate Mint Dessert Brownies

I stuck with my own brownie recipe, but oh man, the mint cream and chocolate icing...soo good! I am very glad that I used creme de menthe as called for as opposed to straying and using mint extract, I also added one drop of green food coloring to give it a more minty look. I melted the choc chips and butter stove top, in a sauce pan over low heat, with no problems. Thanks Kim, this is a keeper! =)

Ginger Veggie Stir-Fry

Mmm this was an ideal weeknight meal- quick but very delicious! To avoid a gummy texture I added the cornstarch and water after the veggies had sauteed in the oil for about 20 minutes. I also upped the amounts of ginger and garlic, and added some crushed red pepper flakes. Great recipe- thanks! =)

OMG these were gooood! I scaled down to 6 servings and only used about one stick of butter...everything else I followed to a T. I'm Irish & Italian and I love when a dish takes from both cuisines ;p Thanks =)

Lemon Pepper Green Beans

I didn't follow the recipe, just stole the idea...I used lemon juice (i just squeezed a lemon over the pan, so I guess 1 Tbsp?) and ground black pepper in place of actual lemon pepper. But the idea came from you, and it was delicious, soo...5 stars! Thanks Annette =)

California Melt

Whoa these were killer!! I've made these a couple times..the breads I've used vary from whole grain roles to ciabatta bread...it seems anything goes! I always saute the mushrooms first, sometimes I use cheddar or provolone, all depends on what I have in. But this is now my favorite way to eat avocado! Thanks Ornery! :)

Israeli Salad

Yellow Squash Casserole

Mmmm I loved this! (Everyone else did too..) I added 2 crushed cloves of garlic and a sprinkle of nutmeg to the squash/onion saute...gave it some nice flavor. I'm not a casserole person but it's so hard to resist squash recipes this time of year. Glad I caved~ thanks for the recipe =)

mmmm these were a nice side to burgers, really zested up the meal! i coated the potatoes by tossing them in a gallon ziploc bag with the spices and olive oil (and a palmful of shaved parm cheese). thanks ashlee =)

Spinach Enchiladas

Creamy Zucchini with Linguine

I really liked this. I was out of milk so I used chicken broth (about a cup) and cream cheese (1/2 a package). I will try the recipe as written next time, but it was easy and a good way to get rid of my zucchini.

Mmm-Mmm Better Brownies

If you are looking for a ridiculously fudgey brownie, this is it. My only strays from the recipe: replaced the oil with butter, and omitted the salt since my butter wasn't unsalted. Jeez these were good- next time I'll double the recipe since I baked in an 8x8 dish and ended up with about 18 smallish brownies. Two thumbs up~ thanks Sarah! =)

Mmm this was tasty! But be sure to let the sauce sit for a couple of minutes (it needs that time to thicken before adding to the pasta). Also if making for a crowd, adjust the recipe- this made 3 normal-sized portions, maybe 4 if you're dealing with light eaters. Thanks Kimber! :)

Extreme Chocolate Cake

Oh man- adjectives used to describe this were "moist" "delicious" "chocolate-y" and "oh my god"...so that obviously meant it was insanely crowd-pleasing! :) The recipe made a lot of batter, enough for 2 9" pans and 4 cupcakes (so I got to sample it beforehand yaay!). Oh the frosting was awesome too! Thanks Rach!

Curried Coconut Chicken

Ohhh maannn! WOW this is something! Everyone stuffed themselves this was amaaazing! I added the curry powder to olive oil and stirred for 5 minutes, then added onions and sauteed for another 5 minutes, then garlic for another 5...and then followed the recipe exactly. "When cooking curry take your time letting the flavors marry" is the advice I receive from my Indian and Indo-Guyanese friends. Thanks so much Roma for a keeper =)
