Spinach Enchiladas Verde

YES these were muy delicioso!! Sure I tweaked the recipe based on what I had in (whisked a dollop of sour cream w/ red salsa to make a pretty pinkish sauce), BUT the concept came from this recipe, so 5 stars! Tasted great, and even the non-spinach eaters devoured!! Thanks! :D

Whoaaa I loved this!! (Everyone else did too...) I followed the recipe verbatim and was pleased with the end result- the only negative was the 40 minute baking time, because it smelled so amazing in the oven that I wanted to pull it out early and dig in ;)

Yikes all that chopping...this was a ton of prep work for something decent tasting. I followed the recipe verbatim and wasn't happy with the end results. I was excited before making it because the ingredients looked awesome... oh well :(

Chantal's New York Cheesecake

Reviewed: Nov. 12, 2009
The crust definitely needs about two to three times more butter to make it crusty. I was so afraid to overmix my batter because of all the warnings against it, that I must not have mixed it enough and it didn't set in the middle. I cooked it for an hour at 350 and let it sit in the closed oven for 5 hours, then chilled it, and it still was gooey in the middle. AND it cracked! I'm going to try it again to see if I can make it better.***EDIT***I chilled it for a full 24 hours and it was like a different cake. Besides the crust needing more butter, this was PERFECT! I also took about 3/4 cup of the batter out and added melted chocolate to swirl through. It looked wonderful (except the cracks) and tasted amazing!

Very good- I liked it a lot! The kids in my daughters' classroom, not so much. I had to make a healthy treat, per the teachers request, but this was not the kids favorite. I didn't care - there was more left for me! Yummy!

My Best Clam Chowder

Reviewed: Nov. 11, 2009
Originally I gave this recipe 4 stars. The first time I made it I used fat free half-and-half, and I think that is what made it sweeter than I would prefer. After making it again, with some changes, I give this 5 stars. As far as changes, I use 5 cans CHOPPED clams, 3 cups cubed potatoes, and light cream instead of half-and-half. Also, instead of using water to completely cover the vegetables, I used clam juice. It came out fantastic! Very thick and creamy (which is fine with me). It it is too thick, you can always substitute some milk for maybe half the cream to thin in out a bit. I might try that sometime. I also plan to up the recipe and try 7 cans of chopped clams. Can't have too many clams. Overall, great recipe.

Onion Roasted Sweet Potatoes

My brother proclaimed, "I don't even eat yams and I can't stop eating these!", so that should speak for how delicious these were! I followed the recipe verbatim, just chopping half a small onion and throwing into the baking dish with the potatoes and mix. Thanks! =)

Very easy to make and very much a comfort food! I was skeptical of the ingredients at first with gravy and cheddar together but it turned out great! My husband like it immediately and asked what was in it. He even requested it be made again which next time I will play around with the seasoning like use Montreal Steak Seasoning for a different kick.

Cajun Pasta Fresca

Reviewed: Nov. 8, 2009
Mmm this is amazing! I one-and-a-halfed this (not quite doubled it if that makes any sense), so I chopped 3 tomatoes to go along with one 28oz can of diced tomatoes. I added more minced garlic than the revised proportions called for, and replaced the salt with freshly ground pepper. My only qualm was too much mozzarella cheese, due to personal preference, so next time I'll decrease. But wow- amazing dish, a keeper! Thanks :D

Grandma's Corn Chowder

I'm not a chowder person but was drawn to this recipe for some reason and gave it a shot on a chillier-than-usual NYC fall day- glad I did! I omitted the bacon (not a meat-eater), used one cup whole corn kernels/two cups creamed corn, and replaced 1 tsp of salt with a pinch of sugar...mmmm really tasty chowder! Thanks for the recipe it's a keeper =)

Simple Delicious Pasta Sauce

Reviewed: Nov. 6, 2009
I only used 2 garlic cloves, and added Italian seasoning as others suggested. I also used a potato masher to break the tomatoes down into more of a saucy consistency. I added a little chicken broth and reduced the sauce to make it thicker, and threw in a little sugar because I like a sweeter sauce. It was delicious!

Slow Cooker Chicken and Dumplings

Reviewed: Oct. 26, 2009
If I could give this 10 stars I would. I LOVED it and so did my husband. I had some friends over for our annual winter food swap...I had this cooking on the counter...every one of them commented on how delicious it smelled. This was the best thing I have ever made in my slow cooker. I even had a friend of mine stop by this morning to pick some up for lunch! I read the other reviews and made some changes...I used 2 cans of cream of chicken soup and half a can of cream of celery. I also used chicken breast tenderloins and added them frozen. This made a huge difference. By the time it was done...the chicken was just falling apart. I added 1 jar of chicken gravy and 1/2 can of chicken broth. It looked like a bit too much liquid but when I added the dumplings, it thickened right up. Also, instead of tearing the dough for the dumplings, I flattened the dough out and cut it into strips and added them the last hour of cooking. I also added ground pepper, garlic powder and onion owder and served it with a sprinkle of paprika. This is definitely a keeper. Perfect food for the fall and winter!!

I followed this recipe verbatim- soo good! Wow, such a moist cake, and the glaze! My god it disappeared in a flash. **Off topic, but I didn't bother reading as many reviews as I usually do because everyone gave tips on cutting the calories by replacing this with that. This is a recipe for a CAKE. Just make it as written, and share it with 9 people so you don't eat the whole thing yourself. ;)** Thanks Deb~ this is a keeper!
