Spinach Enchiladas

The only thing I did differently was to shred some cooked chicken breast to add to the recipe. It was flavorful, healthy and simple to make. My family loved it and we will certainly make this again!

Sour Cream Chocolate Cake

I love to bake but I've never baked a chocolate cake before. After researching I decided to try this one. For Chocoholics its GREAT. My friend who loves chocolate cake just closed his eyes as he ate it like it was heaven!!! I think I will try either milk chocolate or even white chocolate on the frosting next time to give it a little balance otherwise this is a really wonderful recipe. THANK YOU!!!!

Jumbo Fluffy Walnut Apple Muffins

Very nice texture; airy, not thick or heavy! They were plenty moist too. I used Granny Smith apples were a bit tart, so I threw in a cup of white chocolate chips and that added a nice bit of sweetness they needed. Great recipe I'm sharing at a family reunion tomorrow and I will use again for the teacher's tea before Thanksgiving!!!

Beef Noodle Soup

This was so simple to make. I used fondue meats pieces, as they are smaller and I find them to be more tender. Then I added some canned mushrooms for flavor. Added frozen peas for some color too. It seemed a bit bland while simmering, so I added more pepper, a bit of basil, and some sea salt. It turned out very good!!!

Excellent! Moist, flavorful, and so quick! Omitted the mustard as I don't like any flavor of mustard and added some finely chopped pepperoni (as it went with the entree' I was serving). Great recipe!

Wild Rice Shrimp Bake

This was so simple to prepare before work and pop in the oven after! As I noticed there wasn't any seasonings in the recipe, I used garlic pepper, black pepper, paprika, and sea salt. Also used chives as an onion alternative. It was good and pretty healthy. I added asparagus tips as well for some added nutrition. I also sprinkled with Paremsean cheese within the last 10 minutes of cooking. It was tasty and we'll use the recipe again.

Old-Fashioned Cheese Potatoes

I actually made this recipe twice in the same week. The first batch was good; but bland. I added a lot more pepper, garlic, and some minced chives in my 2nd, and was more pleased! It made a nice amount for a family of four. Nice and hearty accompaniment for salmon loaf. I also left it in a bit longer and the potatoes were almost crisped on top; nice and brown while the center was cheesy and tender! A couple tweeks here and there and this was excellent

Mini Meatloaves

I had no problem with the seasoning or the oats in this recipe. I should have used more beef, however, as they were tiny. I used my mini loaf pan and it only made 4. Otherwise it was a good recipe.

Pumpkin Bread IV

Mmmmmmmmm...what a great autumn bread! I added chocolate chips and nuts and made mini loaves. I had plenty for home, the kids to take to school, and send a couple with a friend. I liked this recipe as it wasn't heavy and thick. It was also seasoned properly for the fall...not too sweet.

Followed this recipe to a "T"; I felt no tweaking was needed and they turned out delicious! I made them in mini muffin tins for my daughter's class at snack time. They were gone! My daughter loves veggies so they weren't an issue for her; although I had to giggle to myself knowing all the other students had no clue and readily ate them up!!!

Chocolate Zucchini Cake II

Excellent version of a recipe I'd tried in the past. I took this to a picnic in slices from a bundt pan and it was gone within minutes!!! Extremely moist and the zucchini was well hidden from the watchful eye of my kids!!!

Momma Moots' Pork and Pierogies Casserole

WOW! Am I glad I stumbled across this recipe today. Started out thinking I was going to make the same tired pork roast; then found this recipe! Followed almost exactly; with the exception of omitting the sour cream as I was out, but adding 1/4 cup more milk. Was plenty creamy though with the milk and cream soup. Also used thyme as I don't care for rosemary. And finally I chopped up fresh spinach for a healthier bite and some color! This was a great casserole for a healthy and unique choice. WILL CERTAINLY MAKE AGAIN!!!
