Triple the Ginger Cookies

I first ran across these cookies and made them for special occasions. I was away from my cookbooks recently, however, and wanted to make them for my mother who suffers terribly from arthritis (ginger is one of the wonder spices and particularly good for arthritis). They were as good as we remembered them being and, with a chopper, are not that difficult to make. Don't, however, use one the hand-grinder ginger bottles for powdered ginger! That was the killer. Thanks to the contributr and All Cooks -- I depend on you heavily when I'm visiting my parents!

Chocolate Caramel Brownies

This was very interesting to work with. First off I want to let everyone know that I made the mistake of using 2 cake mixes instead of one and had to double up on all the other ingredients. This is what happends when you have a 2 year old in the kitchen with you! Anyway after this I only kept the amount of choc. chips and caramel the same and it came out great. The dough was very thick and hard to spread. This is why I think it was good that I made the mistake of using 2 cake mixes. It was easier to cover the bottom of pan. Use a metal pan...trust me! It was ready in 21 minutes and very rich. I used a triple chocolate betty crocker cake mix and a devil food cake mix. It was really really sweet. So be warned! Thank you!

Eggplant Casserole

Everyone at the table loved this dish. I added some garlic and garlic salt to the beef and veggies while cooking. I also added a few sweet peppers and shredded cheese. The final touch was some parmesean mixed in with the bread crumbs and butter. Will definitly make this again :)

Tempeh Fajitas

So good. I marinated the tempeh with the soy sauce/lime juice while I was chopping everything else up. I omitted the mushrooms and spinach since I didn't have them handy and used a jalepeno instead of the chile. I used bottled lime juice for the marinade and a few squirts of fresh cut lime into the frying pan...it was delicious and zesty. As a side I made some red beans and rice. It was a wonderful dinner.

Black Bean and Chickpea Hummus

I found this to be lacking in flavor a lot. I'd prefer to make regular tahini hummus over this anyday. I tried it as a spread with melted cheese and salsa though and that was an improvement...but still not worth a second go.

Creamy White Wine Sauce

This is a good base sauce, but I found it to be very salty, however when I paired with lightly seasoned chicken the salt was not as strong. I will try this again with less salt.

Pastry for Double Pie-Crust

This was soooooo hard to work with! I think that it was way tooo crumbly. Very hard to make into a nice crust. I think the shortening needed to be chilled and then added to the flour mixture. After this I think the easiest way to make the crust would be to roll the dough between two pieces of plastic wrap which is the only way it worked for me. I brushed a little water and sprinkled cinnamon sugar on my pie crust. I baked for about 45 minutes. I think if you do the dough between plastic trick it would be the easiest way to work with this.

Maria's Pepper Steak

I actually mixed the soy sauce, vinegar and honey and marinated the meat in it. After this I sauteed all the veggies and added the beef and sauce into the same pot and cooked everything together and it came out very yummy. Hubby loved it! I served it with rice. Thank you!

Slow Cooker Pulled Pork

I wanted to make pulled pork for a July 4th BBQ. My husband told me I would need a smoker. Not really having the room for(or funds to buy) a smoker, I came to Allrecipes looking for something I could make with my crockpot. Saw this recipe and had to try it. I used pork butt, Barq's and seasoned the meat with salt & pepper. Bought some sauce from a local BBQ joint and served it on slider rolls. It was heaven! The best part is that it seems as if you slaved over it for hours, but really it doesn't take much effort at all (especially if your husband does the pulling);). You should keep in mind that the pork will cook down. I bought 5lbs of pork for 20 people. We only had about 13 and there was only a tiny bit of it left after the party. I made this again last night, cause I didn't get enough on the 4th! Can't wait until tonight's dinner!

Amish Macaroni Salad

I made this for the first time today. I added some pickle juice because I was missing vinegar. It still tasted great. I also added yellow, orange, and green pepper to it just for different flavors and textures. I also used a little less sugar, 1 and 1/2 cups. It was devoured in no time. What a great salad! I can almost see how to change flavors a bit by using different veggies too. I did use salad dressing type mayonaise and loved the flavor. Great salad.

Giant Spice Cookies

I DO NOT MIX THIS WITH YOUR HANDS!!!!! It was a VERY sticky batter. I think that it became very hard so as soon as it became warm I put them in a plastic airtight container and my hubby took them to the office and they actually loved them. The only reason I am rating it 2 stars is because it was extemely difficult to work with and became hard.

Orange Mango Chicken

Very flavorful and a great meal to throw together when you don't have a lot of time. Made this with stringbeans and orange rice and everything went together well. Next time I make this, I'll add some peppers and onions to the dish. The sauce was good but very sweet, so if you're not a huge fan of sweetness in your main course, be aware of that.
