Open-Faced Turkey Tacos

This was really good! I like stuff spicy, though, so I added a bunch of extra stuff-- onions, a lil chili powder, etc. I also added a lil shredded cheese to the turkey while it was still hot to make it melt a bit-- tasted really yummy! It was great on a taco, too! :D

One Bowl Brownies

The texture on these is great-- nice and chewy-moist with just enough crunch on the outside, but I'm afraid I didn't really find the flavor too outstanding. It kind of fell flat compared to many other brownie recipes I've tried. But it is good for a quick recipe, I'll give it that! :)

Panna Cotta

This was really really good. I actually only used 1c of heavy cream and used 2% milk in place of the rest of the milk and cream called for, only because thats all I had. It turned out perfect! So creamy and rich, you wouldn't think I had altered it at all. At least it was a little healthier I guess. I served it with slices of ripe strawberries. I'm going to try making a sauce with strawberries & brown sugar and see how that goes. I plan to experiment with this recipe. But awesome as is.

Foolproof Rib Roast

Fantastic! I followed excatly and it was hard not to peek, but it was so worth it! Perfectly tender and delicious. It was a bit peppery for me, but I am not a fan of pepper, so next time I'd add less. The meat was cooked perfectly though!

Beth's Spicy Oatmeal Raisin Cookies

This is definitely the best tasting oatmeal raisin cookie I have ever had! My husband loved them and he took some to work and they loved them too. I've made them a couple times now and sometimes I add shredded coconut. My only complaint is that the cookie is so soft the it just crumbles to the touch. I followed the directions as well as some reviewers' tips. No Luck.

Ginger Glazed Mahi Mahi

This was really really good. I never cooked dolphin fish before and so when I saw the frozen bag of them at Costco I decided to try it and came on AR to find a good recipe. I have to say this is a keeper. The only thing I would suggest is to start reducing the marinade in another saucepan before you start to fry the fish, that way, by the time you are ready to serve, the fish and glaze are warm.

Easy Chicken Enchiladas

I didn't have any salsa so, I used 8 ounces of tomato sauce and I cut up green chillies and added that. I cut down on the cream cheese a little and added a can of refried beans. I cooked the chicken in a skillet with half a package of fajita seasoning. Baked in the oven at 325 for around 30 minutes. I also used the taco style shredded cheese and liberally sprinkled that on top. An easy and absolutely delicious recipe. Thanks for posting it!

Cheesy Baked Cauliflower

This was a wonderful way to prepare cauliflower. I used what I had on hand... a sweet hot mustard and adjusted the amounts of mayo and mustard. I also used a packaged blend of parmesian, romano, asiago cheese. Steamed cauliflower 10 min. and baked 15 minutes... Delicious!

Double Tomato Bruschetta

This was awesome! I used 10 Roma/Plum tomatoes instead of 6 just because there seemed to be too much basil. Also, I did not melt the cheese, but instead served the bruschetta chilled with the cheese on top of the toasted baguettes. I brought this to a BBQ and there was none left and everyone loved it! Thank you!!! I will definitely make this again.

Southwestern Egg Rolls

I just made this last night for dinner and it was everything I'd been craving!!! I need to get the knack of oven baking them but fried as a treat they were absolutely awesome. My hunny even helped wrap them up (the easy part of course, but he gets points for trying) and he said it's getting on his list of special food requests second only to my rellenos de papa! High praise, indeed.

Made a few of my own personal tweeks: - added 1 teaspoon crushed dried oregano - added 1/2 teaspoon ground cumin - added 5 or 6 stuffed spanish olives - let marinate with 2 bay leaves - used sherry vinegar instead of wine vinegar
