Fried Ice Cream

Haven't tried this recipe yet but it's almost exactly as to how we used to make it in a mexican restaurant I worked at (we just didn't use the eggs). For a chocolate twist add some crushed orea cookies :)

Minestrone Soup I

My husband asked for Minestroni soup for dinner and I found this recipe. Wonderful. I had everything on hand except I used fresh parsley and petite diced tomatoes. My kids ate it all up hence, the 5 star rating. Thanks!

Mushroom Pork Chops

very good for as easy as it is! The pork chops came out tender and flavorful. I have made this several times. I season the pork chops with sage or pork seasoning along with the salt and pepper.

Italian Style Meatloaf I

Very good! I added 2 teaspoons of Fennel seed for some extra kick and added 1 pound of ground pork. I increased the other spices accordingly. I made 2 smaller loaves; freeze one and the other I shaped into a loaf and placed on a broiler pan so the grease drips off and away from the meat. Yum!

Eggplant and Zucchini Casserole

Very nice way to cook eggplant and zucchini. I would add more tomato and maybe some parmesan cheese. I made this for Christmas Eve and family members who liked eggplant really liked this.
