Good Old Fashioned Pancakes

This was a good recipe. They were a little thin, but I like thin pancakes. Try using self rising flour for ones that rise better. Also, add a little vanilla for extra flavor.

Old Time Chicken Divan

This was my solution to leftover under cooked roast chicken and it worked quite well. I had to substitute grated cheddar for the parmesan because that was what I had on hand and I omitted the sherry since I had none. The lack of sherry left the sauce sort of bland so I added about 1/8 tsp cayenne. I realize these are significant changes, but I believe this recipe is good enough to allow the cook to improvise and still produce Chicken Divan. Thank you for sharing.

Veggie Enchiladas

This was VERY good!!! The only changes I made was to add salt and pepper while sauteing the zucchini and I also added an extra clove of garlic because I just LOVE garlic! I used 2 small zucchinis, 1 large can of black beans, 1 large can of green sauce and 16 oz. of cheddar cheese. This made 14, taco sized, enchiladas. I agree with you...I think the green enchilada sauce is much better than the red! The green sauce complimented the flavor of the vegetables perfectly! This is a must try recipe!

Mushroom and Sweet Pepper Sandwich

Wow! This is a tasty little sandwich!!! I made it exactly as written except I used wheat bread instead of rye. I made the dressing out of honey dijon mustard and mayo. I've never tried that before but I really liked it! It went perfectly with this sandwich! 10 Stars!

Chicken Tortellini with a Mushroom Spinach Sauce

This was very good! Instead of cooking everything together, I sauteed the onions, garlic, mushrooms and seasonings in a bit of olive oil first. Then I added the spinach and let it wilt down before adding the tomatoes. To thicken the sauce and make it a little creamy, I added about 1/2 cup of ricotta. This worked perfectly and I highly recommend it! I've never used mushrooms and spinach in my tomato sauce, but I really liked it! Thanks for turning me on to a new way of making sauce! Great recipe! The photo was taken without the ricotta.

Easy Shrimp in Creamy Basil Sauce

This was perfect! The only change I made was to use chicken instead of shrimp because my 18 year old won't eat shrimp! And I used fat free half n' half. There was plenty of cream sauce and I only used 1 1/2 cups of the half n' half. The flavor of the garlic, fresh tomtatoes and basil really comes through. I served it with grated parmesan cheese. This is a recipe I'll use often!

New York Rye Bread

I followed the suggestions made by others and reversed the rye and bread flour amounts and I omitted the dry milk powder, but I added 1/4 milk to my warm water. Made this with a stand mixer and I was a bit worried the dough might be too stiff, but it worked out quite well. Very tasty, dense rye bread to rival my local (NY) bakery. Thanks for sharing a great recipe.

Cheeseburger Pockets-ci Recipe

This was so very good! The only changes I made was to use chopped up dill pickles instead of dill pickle relish (I couldn't find this) and I used real onions instead of dried. I also toasted the sesame seeds. Also, I doubled the recipe and it was just enough for 8 burgers. Will definitely be making this very often!

Honey Oatmeal Bread II

I was surprised by how light this baked up. I used 1/2 WW and 1/2 bread flour. You would never know the oatmeal was in the dough. If I make this again I think I will either decrease the honey or increase it to make either a savory or a sweet bread. Thanks for a change of pace.

Ground Beef for Tacos

As simple as it is to make great taco meat from scratch (and far less salty and more tasty) with 6 ozs. of tomato paste, 1 can of Ro-Tel tomatoes (undrained), 2 tsp. cumin, salt, 2 tsp. chili powder, and 1/2 tsp black pepper, this take on taco meat isn't something I'd ever use again...and certainly not something I'd serve to adults.

Southern Moon Pies

I usually bake at least once a week, usually 3 or 4 things at a time. These are my all time favorites! They are so easy to mix up and bake. They are pretty quick to put together and taste so good. The chocolate cake part is not very sweet, but the filling is, so each bite is heavenly. They taste just like a Devil Dog to me. I use parchment paper, so I can remove them when done cooking, and then use the baking sheet again. I always plan on trying a variation, but then I remember how good they are with the original recipe, that I just keep making them that why. My only problem with them is that when I know they are there, I want to eat them!

Rich Herb and Lemon Chicken

My family really enjoyed this. I followed other reviewer's suggestions and reduced the lemon juice to the juice of 1 fresh lemon, so about 1/4 cup. I also added 1 cup of sour cream instead of the 1/4 cup. It was perfect, not too lemony, but with a definite lemon taste and very creamy. We enjoyed it over penne.

Creole Green Beans

I started with fresh green beans, so I blanched them while the bacon cooked to not quite crisp(I only used 3 strips.) I sautees the onions, garlic and pepper until the onions were translucent then added the beans and bacon back in. Since I make my own Creole seasoning mix, I added 2 tsp and omitted the cayenne,salt and pepper. The butter was unnecessary doing it this way and the dish was flavorful, the vegetables tender crisp. This is a nice change from our usual green beans.

Bangan ka Bhurta (Indian Eggplant)

I followed Roxanne's suggestion and roasted the eggplant over a gas burner. I also added garlic because it justed seemed to need it. I did use cayenne, but added more (about 1 tsp)a bit at a time, tasting as I added. Because I had unexpected guests I needed to stretch the meal so I added a few potatoes that I had partially cooked in the microwave. I served this with Roomli Roti from this site and we all enjoyed it. Thanks, Cartha and thanks to the person who nominated this for our healthy meal group.

Best Ever Meatloaf with Brown Gravy

I used this recipe for the gravy only. This was a very good and very easy brown gravy recipe! I made it as written except I didn't have any mushrooms, but it was still very tasty! I would of liked it to be a little thicker, so next time I'll add less liquid. This will be my gravy recipe from now on!
