Oven Roasted Greek Potatoes

Reviewed: Nov. 13, 2009
Made changes here too. Didn't have marjoram, wine or dressing. I went heavy on the lemon and that was the predominant flavor. Cooked at 400 for 45 minutes. Enjoyed the texture alot. Will make again with Italian flavors.

Chicken and Dumplings III

Reviewed: Nov. 9, 2009
This was much better than expected! I used 3 pieces of boneless breast chicken, and I put two chicken bullion cubes in with the water. I only had two cans cream of chicken which looked odd at first but ended up being creamy thick and delicious. I added in black pepper, salt, and all seasoning and next time I will leave out the salt. I had mixed vegetables on the side, but mixing them in would really add a little something. The biscuits I used were Pillsbury Grands and I didn't have room in the pot to put in all of them. Overall, I will definitely make this again! The boyfriend absolutely loved it!

DIVINE! I followed the recipe to a T, and it was awesome. I made it as a birthday cake, in 9-inch rounds, and frosted it with the recipe here called Cream Cheese Frosting II- Perfection!

I subbed butternut squash for the sweet potatoes, and just put some butter and romano cheese on it when it was still hot. Delicious, melt-in-your-mouth goodness.

All American Apple Pie

Reviewed: Oct. 19, 2009
Was this recipe easy? YES! I followed it to a T. Was it tasty? Mostly. Was it what I expected? Not a bit. The filling was dry after baking- just cooked apples and spices, inside an odd, goopy, slightly salty crust that never crisped-up like a pie crust. Not bad, really, just not great.

Easy Apple Cinnamon Muffins

Reviewed: Oct. 19, 2009
I made this recipe for my two toddlers for breakfast, so we skipped the crumb topping. Also, we cannot do dairy here, so I subbed apple juice for the milk. I also added 1/2 cup ground flax seed meal. I filled the cups 2/3's full, and the recipe made 12 muffins. They were very small, but delicious and fluffy.

Pumpkin Fudge

Reviewed: Oct. 17, 2009
AMAZING! I followed the advice of a few reviews the first time I made it, and reduced the amount of sugar- BAD CHOICE! It was sticky goop that never set up. Delicious goop, but not fudge. It sounded so amazing that I couldn't give up. I tried again a couple days later, and followed the recipe to a T. PERFECTION! It's so sweet, so rich, and so pumpkiny! My sister is the eternal fudge critic, and even SHE raved about it. This is definitely becoming a permanent fixture in our holiday season!

Zippy Chicken Corn Chowder

Reviewed: Oct. 5, 2009
Hmm...it's pretty good, but a bit on the bland side (weird, for something with "zippy" in the title!) If I make it again, I'll probably go a little heavier on the hot pepper sauce and add pepper. Still, a nice basic fall or winter soup recipe that is suitable for a wide variety of appetites.

Mexican Casserole

Yummy! A great dish to take to a potluck, as it's easy and quick to make, and relatively inexpensive. It's also easy to adjust to your preferences with different add-ins. As most other people did, I also added quite a bit more salsa. I'm not sure how well it would have worked the other way, but it came out very nicely this way!

Chip Chicken Lollipops

Reviewed: Jun. 14, 2009
I was really excited to try this recipe, although a little skeptical. After reading all of the reviews I decided to go for it and it came out fantastic! I did follow the advice of others and I seasoned the chicken before dipping them in the egg mixture and chips. Make sure you crunch up the chips into really small pieces so they stick to the chicken. I put mine on a plate and covered it with a tea towel and used a meat cleaver to do the smashing! I also made mine into strips and let out the skewers. I can't wait to try different chip flavours! Cape Cod Originals are good for a basic!

Ziti Chicken and Broccoli

Reviewed: Jun. 8, 2009
This was so good and easy to make. I did make some substitutions--> whipping cream instead of heavy (what was on hand), minced garlic instead of hand chopping it, and I added a lot of extra cornstarch and I mixed it with water before adding it in so it wouldn't be lumpy. I used chicken legs and thighs and cooked them in some olive oil instead of breading them. I also used linguine and it came out delish!

Shrimp Fettucine Alfredo

Reviewed: Jun. 1, 2009
It was amazing! I made it for my boyfriend, his brother and his girlfriend and they all loved it. I cooked the shrimp first in garlic removed it from heat so it wouldn't over cook while making the sauce. I did use more Parmesan because it wasn't thickening like I wanted, but once it started to cool it did thicken (a little too much lol, so I added milk). I will make this again indefinitely. Recipes are guidelines, experiment!

Bread Machine Bagels

AMAZING! I've tried bagel recipes before, and they just didn't turn out well. I followed this recipe to a T, aside from omitting the egg wash and poppy seeds. They were a little crisp on the outside, and fluffy on the inside. DE-LISH! I put them in an air-tight container, and they were great the next day for breakfast as well.

Penne Primavera

Reviewed: Apr. 9, 2009
This was a good recipe. I'm only giving it 4 stars, because I had to do a fair bit of tweaking by taste to make it a tasty dish. A great base, but a little off. Good thing it is open for tweaking in any direction. I had to add 2x the vegetable broth, and simmered the complete dish for twice the amount of time at the end for the pasta to be edible. I used whole wheat penne, used TWO big garlic cloves, and left out the cheese, making it a delicious vegan dinner, with a bit of tweaking on the flavor.

White Bean Chicken Chili

Reviewed: Apr. 8, 2009
Both my boyfriend and I loved this recipe, which is a tough call. I veered from the recipe a bit and cooked the diced chicken and 4 cloves of fresh garlic in a pan, then threw everything into a crockpot on high for 2 hours and low for another hour after that. I did not use oil, tomatillos or lime and used 1 can of diced tomatoes with chilis. I also added a can of pinto beans and a can of corn instead of fresh. I served it with lowfat sour cream, shredded cheese and Tostitos chips and it was soooo yummy! We fought over the last bowl of leftovers.

Spanakopita (Greek Spinach Pie)

Reviewed: Mar. 12, 2009
Great! I made a few changes. I used lots more phyllo because I like the crunch. I used frozen spinach, added fresh dill and salt, and used butter instead of olive oil. My friend recommended that you can freeze uncooked and it keeps well. Will be making again.
