Fruited Curry Chicken Salad

Aggression ( Oatmeal ) Cookies

This cookie works amazingly well with lots of small children! I have 5 kids aged 8, 7, 5, 4 and 3, and I was concerned about the younger two, but these cookies can't be spoiled! You can throw in any additives you want and they still come out good. We made 6 batches and each kid picked a different thing to put in theirs. We had chocolate chips for one, toffee walnut for another, peanut butter for another, coconut chocolate chip and butterscotch chip. They were all awesome! We also did one batch of choclate caramel chip, not so good, the caramel and oatmeal don't go well together. Also, unless you REALLY like sugar, don't do the coating. We did one batch and realized how sweet they were and made the rest without dipping them into the sugar, much better. Thanks for the recipe!

Steamed Tuna Fish

I knew I would love this recipe, but my husband has never been a big fan of fish. He really enjoyed it! I prepared the sauce exactly as the recipe stated and for the tuna, I just marinated it for a half hour with lime juice, soy and ginger before steaming it. This recipe is a keeper. Thank you!

Chocolate Ribbon Pie

I was looking for a pie that would be special enough for the Holidays and easy to make sugar free for my diabetic friend, this was it! fantastic! Both flavors blend well and yet are distinct from eachother, and it's easy as pie to make ;-) Thank you so much for this recipe! Oh I also made one low fat and sugar free, still delicious

Big Germans

The family loved these, I doubled the batch (to feed 7) and they cleaned me out! I gave the kids an option of strawberries, or bananas and walnuts. The only thing that was iffy for me was they seemed a little chewy? But they tasted fantastic!

Whole Wheat Banana Nut Bread

I had 3 overripe bananas and was in need of a good healthy banana bread recipe. I was going to use whole wheat flour anyway so I decided to try this recipe. I made a few substitutions. I used 1/3 cup overflowing with unsweetened applesauce instead of oil, 1/4 cup Splenda and 1 Tbsp honey instead of all honey. I added an extra 1/2 tsp of vanilla and used eggbeaters instead of eggs, adding an extra 1/2 egg or so. I added an extra half banana and subsituted 25% of the flour with soy flour to add extra protein and fiber. I also added 1/2 tsp extra baking soda just to make sure. I then made them in a muffin tin making 12 muffins exactly. I may have undercooked them a little bit at just about 30 minutes, but I also had to put them in the fridge for 2.5 hours because I didnt have enough time to cook them before class. For the health factor involved, these are amazing! They turned out very well, I enjoy them a lot but I probably didn't mash the bananas enough first. I eat either one of these or one of the "addictive pumpkin muffins" every morning for breakfast now with a piece of fruit. Just take one out of the freezer and bring it to work, very simple and incredibly healthy!

Addictive Pumpkin Muffins

I first changed the serving size down to 1 dozen muffins but then I made some healthy modifications to this recipe. I used all whole-wheat flour instead of all-purpose flour. Instead of 1-1/3 cups sugar, I used 1/4 cup Splenda and between 1/8 and 1/4 cup of honey. I didn't have nutmeg (Shoprite ran out) or ground cloves so I doubled the cinnamon to 1 tsp. I used eggbeaters to replace the eggs but put an extra 1/2 egg in. I also overflowed the 1/3 cup of applesauce and added about 1/4 of fat free plain yogurt. These muffins made my dorm smell INCREDIBLE. I also topped them with extra cinnamon. They were extremely moist (I think I took them out a minute or two early) and have a nice pumpkin-wheat-nut-raisin flavor and even my non-health-conscious roommates liked them as well as my coworkers! I am going to make another batch or 2 tonight to freeze. Highly Recommended!!

Linguine with White Clam Sauce I

I really enjoyed this! I did skip the extra 1/4 cup clam juice but I felt the juice from the minced clams was enough. I cheated on the parsley too by using dried, but if you have it, I'm sure fresh would be better. My favorite things about this recipe was how easy it was and that it uses very little oil - so it's not fatty or greasy. I'll definitely make this again.

Mexican Turkey Burgers

We really liked these very flavorful Mexican burgers. Definitely serve them on wraps as the recipe indicates because the texture is too crumbly for a bun - it was a little challenging keeping them together, so I found them a little messy but definitely worth it! We happen to like corn so I used the whole 15 oz can which gives you extra to put on the wrap, but you could either cut that in half or eliminate it entirely. Also I chose to use flavored tortillas (jalapeno/cilantro) instead of plain flour ones for extra kick.

Chicken Fried Chicken

Spiced Beef Stew

This is a great quick and easy stew. Everyone, even the kids, loved it! It also is great for getting rid of leftovers. I threw in left over roasted potatos and carrots, and I used the onion soup mix. Excellent!

Easy Peanut Butter Fudge

Although this recipe is extremely quick, it had a very hard time firming up. I had to stick it in the freezer, but as soon as I tkae it out it gets smushy again. The taste is a bit much for me. Way to much like confectioners sugar than peanut butter or chocolate. It was OK for a fast fudge.

Angel Hair Pasta With Fresh Tomatoes

Eggplant Parmesan II

Excellent; this tastes even better than the fried stuff. I found I needed 2 large eggplants and 4 eggs in my case; and also needed to brown the slices a little more than 5 minutes per side to actually get them 'brown'. Makes GREAT leftovers too.

Better Slow Cooker Robust Chicken

I made a few changes to this recipe and I was so happy with the results, the most important one was thickening the gravy which I thought was too thin by adding cornstarch and water and turning the crock pot on high for a few minutes after the dish was cooked. I used whole chicken breasts instead of cut into strips and they came out so tender. Also nixed the bacon bits. It was VERY delicious, healthy and hearty. I used a little less vinegar than the recipe called for and chose a quality balsamic vinegar. Served over rice, magnifique!

Mama's Ambrosia

Perfect ambrosia in my opinion!! There are many ways to make this - including those recipes that use cool whip instead of sour cream (too sweet for me) - but I made the right choice going with this one, it's just right. I used Fat Free sour cream and enjoyed this as a healthy TREAT.

BBQ Chicken the Old Bay® Way
