Baked Salmon II

I don't just want to be just another person raving about this recipe so I'll tell you why we loved it. The fish comes out very moist and tender and of course full of flavor. Changes I made were for lack of other ingredients i.e. I used 1/2t dried thyme in addition to the other called for spices, wayyyy less olive oil, and only added the lime (had no lemons) juice before cooking. I also had 2 lbs of salmon so I increased the garlic which I grated for more intense flavor and also baked it in a glass dish covered with foil. If your fish is thin you have to cook it less, mine was thick but thin along the side so I folded the thin side under for more even cooking. It is one of the best salmon recipes ever.

Irish Chicken and Dumplings

This was very tasty, my hubby said the taste was very good. On the other hand it was a mess, the dumplings were overwhelming and turned out to be a monster they took over the dish and made it a thick gloopy mess. The gravy vanished after the dumplings were added and cooked. I used a biscuit mix like the recipe called for and they disintegrated. So in hindsight next time I will make it with more water/stock and make homemade dumplings. I did add a lot more spices, such as fresh thyme, garlic, Italian seasoning etc. and used Campbells lowfat cream soups. The taste is undeniably good.

Spicy Sweet Potatoes

This was very good, the word yummy comes to mind. I used all the ingredients except I substituted turbinado brown sugar and used black pepper instead cause I didn't have white, the cooking time I changed; about 20 minutes into the cooking time I smelled a burning smell and it was the sugar causing the potatoes to darken, it only took 20-25 mins. to cook and I even reduced the oven to 350. Thankfully it added to the flavor and the dish was great and tender. As a suggestion to make it even healtier reduce the oil and sugar.
