Laurie's Shepherd's Pie

I used a pie crust with this, green beans instead of the corn and added cheddar cheese on top of the meat layer and as a garnish on top. Wonderful.

Cranberry Pumpkin Bread

Spicy Haddock

Spiced Pumpkin Molasses Muffins

Didn't have to feel guilty about eating these. I added 2 tablespoons of wheat germ and sprinkled the top with flaxseed meal before baking and added the walnuts as suggested. A very good muffin that I will make again.

White Chocolate Pumpkin Dreams

Awesome. Everyone that tried them raved about them. I had to quickly get give them away so I wouldn't over indulge. I lightly frosted them and used about half the nuts and 3/4 of a bag of the white chocolate chips, as was suggested. Your baking time may vary, depending on what you desire. What a great cookie.

Sauteed Curried Corn

Really good. I love curry and I love garlic. I added a little finely chopped green pepper mostly for the color but they compliment the corn as well.

Lasagna Roll Ups

I have made these for years minus the tofu and what a great addition it is to an old favorite. Next time I will add and egg to the tofu, acheese mixture to firm it up. Excellent!

Delicious Blueberry Smoothie

Try it with a chopped up apple instead of the juice and a fresh banana. I omitted the tea and added 1/2 of vanilla yogurt, 1 cup of frozen blueberries and 1 tbls. of flaxseed meal for health reasons and flavor.

Clam Chowder Casserole

My father used to make me eggs and noodles and I have always loved them. I have made them for others who are supprised at how good and satifying they are for a weekend start to the day. You can add to it according to your taste. Fried onions are good, chopped up pieces of ham, you name it.

Blueberry Pumpkin Muffins

These are great. I cut the recipe in half and made 6 muffins to take to work the next day, using the left over pumpkin from the pumpkin bread I made for my mother the night before. A real keeper.
