Old Fashioned Onion Rings

Better than expected! I cooked them in a skillet with veg. oil b/c i don't have a deep fryer and turned out VERY WELL! My husband prefers them to resturants!!

I was actually searching gluten free recipes and this one was included in the search. If you are gluten intolerant, make sure to read labels, as alot of these ingredients tend to not be gluten free.

Sushi-Inspired Tuna Salad

Quick and easy. I added jar minced ginger instead(in the fridge), threw it on a salad and sprinkled with rice vinegar as a dressing. Instant healthy lunch! And it helped my sushi craving.

Mexican Chicken Soup

I agree, this soup is fantastic and so quick and easy. I prefer not to use pre-packaged spice mixes. The ingredients include "ethoxyquin" and other scary sounding things. I make my own seasoning mix inspired by a low carb cookbook and it is super yummy (and not processed!) 2 T chili powder, 1 1/2 T cumin, 1 1/2 T paprika, 1 t onion powder, 1 t garlic powder, 1/4 t cayenne (or more if you like it hot). Use it as you would taco seasoning mix from the store, two or three tablespoons of the mixture will flavor a pound of meat.

Make-Ahead Mashed Potatoes

The last minute hassle of mashed potatoes on Thanksgiving has come to an end. I have made this recipe two years in a row and my guests have asked me to promise it will stay on the menu. I used onion salt the first time and found the taste a bit processed. This year I replaced with a few cloves of roasted garlic and some butter sauteed rosemary. Yum.

Homemade Wine

Never tried making wine before. I used fresh grapes that I was going to make jelly with. It cam out perfect. Friends said it had the "best Legs" of any homemade wine they had ever had. Going to make some more.

Twice-Cooked Coconut Shrimp

Great recipe, great flavor, had to tweak the proportions of flour and water a little; as the batter seemed a little weak. I also added a little home grown dehydrated garlic. I added a 1/2 cup of ice cold beer instead of ice water. The shrimp was very moist and still tender. A Keeper

Creamy Potato Casserole

Heavenly Shortbread

Deep Fried Lobster

Perfect! Our fishmonger gave us a bag of frozen rock lobster tails and we needed something new to do with them. My husband wanted them again the next night. I added a little more spice to the mix otherwise perfect. Thank you.
