Mom's Quick Pasta Sauce

Pretty good and quick to make. We like the Best Marinara Sauce recipe better, but this one is nice because it doesn't require wine. If I have to buy one bottle of wine... I have to buy two. I just can't make it out of the wine store without at least two bottles.

Pizza Casserole

I like this well enough, but my daughter HATED it! She cried when I was telling her to clean her plate and then said I'm not allowed to ever make it again. Ehhh.... it's good heated up for lunch. I'll make it when she's at her dad's.

One Skillet Corned Beef Hash

This recipe was pretty good. I used blue, yellow and red potatoes, yellow peppers and chopped up celery leaves straight from the garden, and our own natural made cubed corned beef. The vinegar was the only thing that was a bit different. I love corned beef hash, but the vinegar gave it a different flavor. I liked it, but it's not as good as without.

Granola-Date Cookies

These are amazing. I burnt the first batch and my dogs love them too. My daughter eats them for breakfast. Quick and easy to grab on the way out the door. I omitted the salt but used salted nuts since that was what I had in the cupboard. They are yummy.

Mediterranean Farfalle

I thought this was a restaurant caliber dish. The flavors were intense and blended so nicely together. I made this according to the directions except I used whole wheat ziti for the pasta and I used a bit more fresh basil than the recipe called for. I also cut the chorizo links into little cubes instead of frying it loose. My husband really enjoyed it to. My only complaint was that I think you could use a little less extra virgin olive oil. There was oil left on our plates at the end of the meal. But a VERY fast and wonderful taste experience !!!

Chicken Zucchini Casserole

I rated this a 4 instead of a 5 only because of the changes I made. I feel that 3/4 cup of butter is waaaayyyy too much. These are the changes that I made. I took out about a half cup of the stuffing mix and mixed it with a tbsp of melted butter, so the top would be buttery and crispy. I mixed the other ingredients using no butter and a cup of fat free sour cream in place of the butter and half cup of sour cream. My husband loved it !!! It was healthy and delicious !!!

Spicy Grilled Shrimp

Excellent! The only changes I made were to omit the cayenne and paprika, substituting creole seasoning instead. I also added some parsley flakes to the marinade as well. Marinate for about 20 minutes, and the end result is very similar to the shrimp on the barbie served at the Outback Steakhouse. Serve with remoulade sauce for a winning combination!

Spicy Peach-Glazed Pork Chops

This is a very good recipe for a quick supper. The only change I made was to use sugar-free apricot preserves instead of the peach preserves. I wasn't sure it would still work without the sugar, but it turned out nice. I served it with sauteed zucchini from our garden and a side of rice that I poured the preserve mixture over. My hubby really enjoyed this even though he doesn't like apricots. He thought it was peach preserves because he saw the recipe. Oh well...

Marshmallow Fondant

WOW! I have been scared to try fondant but I finally overcame my fear...and this is the recipe to use! I stuck the dough hook on my Kitchenaid and let it do all the work, no mess! I never needed the butter and it was smooth and lovely! I won't be ableto taste it for a few days but that's okay, it is has already earned staying power in my recipe file.

Quick Brownbag Burritos

Definitely good lunch food. Really easy and quick to make in the morning before work while the coffee is brewing. I warmed it up in the microwave for 15 seconds and am definitely pleased with it. I used pinto beans instead of black beans. I just like them better.

Cream of Tomato Soup

Ehhhhh....this was OK. Maybe it's because I used red onions, but the flavor was a little...not what I wanted. I'm definitely going to try it again with different onions. I'm not sure why you want to let it cool and then put the milk in. Who wants cold soup? I had to heat it up after the milk was added. Updated the next day: I just had some leftovers for lunch. It's definitely the onions that are ruining it for me. Maybe I'll try onion powder next time - I'm not enjoying the onion texture in my cream of tomato soup. Otherwise, it's pretty good.

Parmesan Baked Potatoes

These were awesome! Only thing I did differently was add sprigs of rosemary and sage while the potatoes baked. These were also wonderful leftover, sliced into wedges and reheated in a bit of olive oil on the stove.
