Marie's Easy Slow Cooker Pot Roast

My boyfriend (who is an incredibly picky eater) and I loved this recipe. I used garlic powder on the meat and olive oil to brown it. I used beef broth rather than the water, used a 3 pound roast and cooked it on high for 5 hours and the meat just fell apart. The vegetables were cooked well - the potatoes were not mushy at all and soaked up a lot of the lquid, tasted great!

Minted Marinated Zucchini

If you can cook the zucchini in a grill pan the better. You need high heat and brown/sear marks on them and they should not be overcooked. They need to have a tender crunch to them. If you dont like mint, then this recipe is NOT for you.

White Cheese Chicken Lasagna

This was a good dish, definitely worth making again. I served with with a green salad and french bread, and my family enjoyed it. It was not unlike a lasagna alfredo dish that I've tried previously. Next time, I would recommend using only one 10 oz spinach, as two just wasn't necessary. Unless, of course, the spinach is meant to give the recipe additional structure. Other than that, I did make some slight modifications, such as layering some of the spinach at the bottom on top of the chicken, and adding the rest to the sauce mixture before layering.

To Die For Blueberry Muffins

As a blueberry muffin expert, the only thing lacking which is a staple in blueberry muffins is LEMON. Add lemon rind and a little lemon juice to the batter and you will see how the flavor perks up even more. I halfed the streusel topping and added some lemon and it was just enough. Overall this was a very good blueberry muffin recipe.

Broccoli and Ramen Noodle Salad

I make this recipe using the oriental flavor noodles and it comes out spectacular!! It is my signature dish to bring to warm weather parties. When people see it for the first time, I always get the "it’s made with what?" and a surprised look. But by the end of the party it’s always gone and everyone is raving. Plus, it’s incredibly easy to put together. Make it 1-2 hours before you serve it and keep it chilled for best results.

Romantic Chicken with Artichokes and Mushrooms

Good. Needed to sautee a little minced shallot before adding the mushrooms and artichokes. I also added a little chicken broth. Hint - flour the chicken before sauteeing. The juice/sauce will thicken after adding the chicken back to the pan.

World's Best Oatmeal Cookies

The texture on these were great. The flavor came out more after a few hours. I just thought the crisco made them a bit greasy. I added a bit of cinnamon and nutmeg (that was a plus). I would definitely make them again. I originally needed to find an oatmeal cookie without dairy that my lactose intolerant son can enjoy.....and he has been enjoying these.

Feta Cheese and Bacon Stuffed Breasts

Great easy recipe. I agree with the reviewer below about using a little less oil. I added one super thin slice of mozzarella along with a heaping tablespoon of crumbled feta cheese. I also used turkey bacon. An option is defintely to add some spinach. I husband and kids said to definitely make again...and I will.

Pork Chops with Raspberry Sauce

It was very good. I sauteed a little chopped red onion in butter before cooking the sauce. Also, another pointer... If you have balsamic vinegar add some of that in place of the white. All in all, my family really liked it and asked me to make it again.

Chewy Peanut Butter Chocolate Chip Cookies

I made these without the chocolate chips. They have the firm but chewy texture I was looking for. I used chunky peanut butter but the next time I will use a bit more maybe 3/4 cup and add a few chopped peanuts....just for more peanut flavor. I recommend cooking it less at a lower temp. I did 325 deg. for 11 minutes. We all love them. Can someone tell me if shortening can be substituted for my lactose intollerant son?

Strawberry Cheesecake Quesadillas

I tried this recipe because those were the only ingredients I had in my kitchen. I wasn't feeling the creamy fruity thing. I left out the fruity and made kind of a grill cheese sandwich. Except the cheese was cream cheese and the bread was a tortilla. I buttered up a pan and just browned the folded cream cheese filled tortilla. Now thats a great snack. MMMM.....

Chocolate Cavity Maker Cake

Everyone in my family loved this cake. The first time I made it, I forgot to stir in the chocolate chips in the batter, so I added it in the bundt pan. It came out great because the chips didn't fall to the bottom of the pan and created a center similar to "molten chocolate cakes". Thanks for sharing!

Golden Rum Cake

this was exactly the moist and aromatic rum cake i was looking for. the nuts adds an elegant touch. one suggestion, use jamaican dark rum instead of puerto rican rum, it won't have a bitter aftertaste.thanks for sharing.
