French Baguettes

For awhile now this has been my go to recipe for when I want to serve bread with dinner. Measurements are spot on. I make mine by hand or with my KA. I usually skip the egg yolk and water and just throw a little water into the bottom of the oven as I'm putting the bread in to get a thicker crunchy outer crust. I made this last night for the 147th time and we devoured one loaf right out of the oven. The second loaf will turn into croutons today. This is a great recipe, for novice or experienced bread makers alike.

Waffles I

My first time making waffles and a definite success. I made I few changes: doubled the sugar and vanilla. I also used 1 cup of eggnog (wanted to use it up) and 3/4 cup of skim milk. This will be my go to recipe for waffles, no need to look further. Great recipe.

Chicken Marsala

Excellent...with some changes. Agree with many of the other reviewers that you need to double sauce and mushrooms! Also, sauted mushrooms and about 4 cloves of garlic in butter with some garlic salt before adding it to chicken/wine mixture. Delicious, this recipe is a keeper.

Yam Soup

I used vegetable stock to make it vegetarian. The box was just shy of 3 cups since I used it for another recipe and added close to a cup of water. I used Bismati rice instead of wild rice. There were 2 yams on hand, which might have been around 2 pounds. I used actual garlic instead of the powder and sauteed it with red onion and omitted the onion power. While tasting I added a touch of garlic salt, and more of the spices to the soup.

Pumpkin Cookies VI

These cookies are good, I just wouldn't call them cookies. They are definitely more cake/muffin like. Still good, I just wouldn't call them cookies. The only change I made was to add some pumpkin pie spice and to add bake time.

Condensed Milk Chocolate Frosting

Fudgey and more like thick glaze or ganache but still pretty good and super easy. I had no trouble with it setting up, in fact it thickened up after only a few minutes of stirring. You'll know immediately when it's done, it thickens super fast. I ended up stirring in about 3 tablespoons milk instead of water to thin it slightly.

Roasted Broccoli

I am always trying to find new ways to give my family their daily dose of vegetables. I followed others advice about the overspicing and didn't use steak seasoning or chili powder at all. Instead I used black pepper and my favorite garlic salt. It was very good and had a great texture.

Brooke's Best Bombshell Brownies

I've made these twice, following the recipe exactly. These taste their best the NEXT day. Actually the first time I made them, I had one while it was still warm from the oven and thought that while it was good, it was not as good as the boxed mixes...Then the next morning (house was cold overnight) they were fudgy and amazing. This will be my "go-to" brownie recipe from now on and will always plan to make them the night before serving.

Pesto Tuna Salad with Sun-Dried Tomatoes

I am a big fan of tuna, in fact I love it!! I also love pesto. Having said that, this is such a fun variation on tuna salad!! I love the flavor combination. I used homemade pesto that I thawed from the freezer and a 6.4 oz. pouch rather than a can of tuna. Other than that I didn't change anything. The more pesto the bettter in my opinion!!!

Apple-Stuffed Acorn Squash

this was a really nice way to make acorn squash. My kids and husband said it reminded them of fall. The squash it self was a little dry next time I may add some butter/honey mix directly on the squash then put the apple filling on. Otherwise it was delicious.

I didn't expect to like this but I did!! You have to like ketchup to enjoy this recipe because it is the main flavor. I can't wait for my oldest son to try this because he loves Japanese cooking and culture. The only thing I did differently is to fry the vegetables in a mix of smart balance vegetable oil and butter instead of just butter.
