World's Greatest Vegetable Broth

I made this to use for my Thanksgiving turkey stuffing. I added mushrooms because I love them. Going to chop and freeze the leftover roasted veggies to use in turkey meatloaf.

Crabless Chicken Cakes

I found this because I had leftover already cooked chicken from making quesadillas the night before. It's a fresh idea for left over chicken. I chopped the chicken breast in my food processor until it was pretty fine. This is key. I mixed it with egg, mayonnaise, garlic salt, paprika, and tarragon. I dipped the patties in egg and coated them in panko breading. pan fried in a non stick rachel ray small frying pan lightly sprayed with olive oil. I felt inspired to then put them on a baking sheet, cover them in marinara sauce, sprinkle each one with mozzerella and broil until the cheese was browned. They were good that night, and they were good as leftovers.

Slow Cooker Ham

I used a spiral ham and poured a small (8 oz)can of pineapple chunks and then patted on the remaining brown sugar. I'm aware that sprial ham is already cooked so I put it on low for only about 3 hours. I basted by spooning the liquid and pineapple over it every half hour or so. I liked it and I'm not really a fan of ham.

Roasted Chickpeas

These are great. I used less olive oil and cajun seasoning. Roasted them at 400 for almost an hour, shaking the pan every 10 minutes.

Slow Cooker Beef Stroganoff I

Made this last night for dinner and it thought it was wonderful! I took ALL the advice of JILLYBEAN14 and it was very tasty! The only thing I did different was used a low fat sour cream to add to the top. Perfect! Will make again!

Pear Honey Cranberry Sauce

Wow. I've never really been a fan of cranberry sauce. My family typically slices up a can of the jellied stuff. Not this year!! I made it last night and froze it. Subbed orange juice for the water, simmered everything (but the lemon zest and juice) for 15 minutes, then added the zest and lemon juice. It's VERY sweet and VERY tangy and absolutely beautfiul looking.

Poor Man's Pepper Steak

I really wanted to like this one but...I did not so much. Boyfriend didn't like it either. The steak was okay, not great, and the vegetables were way too soft and practically falling apart. It definitely was not worth the hour and a half it took to cook it. I think it would have been a much better plan to simply omit the flour and cook the steak on the stove, adding the onion, pepper, and garlic and just left it at that.

Sauceless Garden Lasagna

I made this yesterday and it was very tasty. There was a significant amount of water that came out of it so I think if I made it again I would pre-cook the spinach mixture and drain it and also seed the tomatoes to cut down on the moisture content. The flavours were very good though, regardless.

Downeast Maine Pumpkin Bread

This was phenomenal! Moist and dense with a wonderful mix of spices. I made it with fresh pumpkin--- kept one loaf for the family and shared the other two with neighbors.. they are STILL raving about it! This one goes in my personal recipe file.

Balsamic Cream Sauce

Wow. THis was so good served over sauteed chicken and penne. I used only 1 tsp of chicken base rather than 2 tsp of boullion (which I think would've been quite salty). Next time, I'll add sauteed mushrooms as well. And there will be a next time...soon.

Best Steak Marinade in Existence

This recipe was great. I did blend it, but I don't really see why you have to. I was a little hesitant about adding the hot sauce because I don't like my food to be even a little spicy, but I added it because my husband likes hot sauce. You couldn't really taste it, so I'm not sure whether it would be any different without it. I let the steaks marinade for about 24 hours and they were excellent. I'll definitely use this again.

Delicious Ham and Potato Soup

This soup was great! I would have given it 5 stars, but I made a few changes of my own. First I sauted all the vegetable and diced potato,(I also added more potatoes than the recipe called for),adding carrots to it also until they were translucent. I added a couple cloves of garlic right before I added the stock...instead of water. I diced a ton of leftover ham and added that and brought it to a simmer until the vegs and potato were almost done. I followed the rest of the recipe and it came out super!
