Feta and Beet Stacked Appetizer

If it were not for this recipe here, I would have never thought to combine beets and feta. What a wonderful combination. I also added some black kalamta olives, and didn't stack. I don't eat beets, but will eat them like this. Thanks for the post!

Pecan Pie V

I was short about 1/4 cup of brown sugar, so I just added more white. I also added one more egg because I had a deep dish pie crust and I was afraid that 2 eggs wouldn't fill the crust. I also added about 1/2 cup more pecans. This is a delicious, very easy pie to make.

Baked Potato Skins

These rock! I can't remember the last time I had potato skins. I didn't use the oil, just sprayed with PAM. Even my picky DS liked them. I will make again.
