Awesome Honey Pecan Pork Chops

Something just wasn't right about this...I would have added more honey. Not enough to balance the saltiness of the chops. Probably won't make again.

Chocolate Banana Oatmeal Porridge

Obviously if you add chocolate and brown sugar to something, it's going to be delicious. :) I'm enjoying a bowl as I type this and it is very good. I did cut the sugar down to 1/4 cup and even with a pretty green banana it's plenty sweet. I sprinkled some cinnamon on top, and it was great! It does crack me up that all the reviews for this recipe call for omitting the sugar and the chocolate: "try this, it's amazing!" That's not a recipe, that's just regular oatmeal, people. Enjoy!

Apple and Spice Cookies

Not a bad cookie. You can't really taste the apple though it's nice to know its there. I substituted whole wheat flour for half the recipe, and baked mine for exactly 8 minutes and they came out perfect and chewy in the middle.

Teriyaki Pork Tenderloin

This was great for my first time preparing pork tenderloin. I had all of the ingredients on hand. I marinated it for most of the day but not quite 8 hours. I baked my tenderloin uncovered for about 10 mins at 425 before covering the meat and lowering the heat to 325 for an additional 40 minutes or so... everything tasted great but without basting during roasting I think the meat got just a touch dry. Definitely recommended!

Homestyle Beef, Macaroni and Cheese

Broiled Tilapia Parmesan

I made this last night for dinner and it came out really good. I changed the recipe a little bit. I used the fat free squeeze butter instead of real butter, used low fat parm cheese and used regular salt instead of the celery salt. The sauce came out great and was even good as leftovers. I made with mashed potatoes and green beans.

Mother-in-Law's Chops

My family and I loved this recipe. The pork had a great flavor and was very tender after cooking for 2 hrs. I served it with mashed potatoes and green beans. The best thing is that this recipe only rates as 4 points on a Weight Watchers scale. Highly recommended.

Classic Peanut Butter Cookies

I just made these cookies. And like other reviewers said, I added more peanut butter and more flour (1/2 cup extra of each). While the flavor is amazing, the consistency is a little off. My cookies are a little crumbly and chewy. Didn't know that could happen, hahaha. I would give it 4 1/2 stars if I could.

Rocky Road Ice Cream

Easy Batter Fruit Cobbler

This isn't the tastiest cobbler I've had, but it was definitely the easiest! It was unbelievable how fast and easy this was. This recipe does create a nice crust on top and around the edges, but I think it was more like a bread pudding w/ large chunks of fruit than a true cobbler. While mine did not turn out greasy, I do think the butter can be halved. I made mine to fit a ceramic oval dish that's approx 9x13, so I sort of doubled the recipe to fit the dish. I had at least 4 cups of freshly picked organic nectarines from my friend's garden, and I literally eyeballed the batter to fit b/c I wanted more fruit than batter. I used whole wheat flour which usually requires more liquid than all-purpose flour, and it gave the cobbler a nutty taste which I really enjoyed. Otherwise I think the batter might have needed more spice since it's really only flavored with butter and sugar. Firm nectarines that are still tart are the best to use for baking, in my opinion. They turn out perfectly sweet, tender, and flavorful. Ripe nectarines tend to get way too soggy and syrupy sweet after baking, for my taste at least.

Rhubarb-Raspberry Crunch

I made this today for a friend's bday picnic and it was a HIT! Gobbled up with no leftovers. I cut the sugar in half b/c I added very ripe, fragrant strawberries and blueberries instead of raspberries. I still found it VERY sweet. I probably could've added a third or quarter of the white sugar. I didn't have instant tapioca so I added 3 tablespoons of cornstarch, which turned out to be the perfect consistency. I modified the topping, doubling everything except the butter, which was a mistake. You need the butter in the topping to really make it crisp. Mine turned out kinda of soggy where there wasn't a pea-sized chunk of butter, b/c I guess the dry ingredients without sufficient butter would just "dissolve" into the wet filling. Tasted delicious, but didn't have the contrasting crunch texture from the sweet filling. I also added cinnamon to the topping, but I didn't really taste it.
