Chicken Breasts Stuffed with Crabmeat

Super tasty! I ended up taking out the wrong pack of chicken that only had 2 breasts, but after flattening them and rolling them with the filling there ws enough for 4 servings. The filling is wonderful. My only complaint is that I wanted more filling in my chicken! Next time I will double the filling and keep the chicken the same.

Lemon-Butter Snow Peas

This was decent in flavor. Not the biggest hit in the house, but decent enough. I steamed my snow peas instead of using the microwave. Maybe that made the difference.

Broccoli with Garlic Butter and Cashews

I am the only person who likes broccoli in my house so we substituted snowpeas. The sause is wonderful and everyone just loved it. I cannot wait to try it on some other veggies or even over chicken and rice. The sause was the highlight.

Austrian Jam Cookies

Mine were in the oven for 40+ minutes and some were still slightly underbaked. They tasted alright, but probably won't make them again.

Irresistible Irish Soda Bread

this is a really delicious, moist bread - but not quite how I envision irish soda bread. still, definitely worth the bake! I think dried cranberries or another fruit sweeter than raisins does it best justice.

Apple Chicken Quesadillas

This was a great dish. Really easy to make. Another easy dorm meal. I used a toaster oven to bake them and I think my only issues was that I could only make one at a time. I used a little more cheese than it called for and substituted half a red onion for the regular onion. It was wonderful. I will definatly make these again!

Crispy Baked Chicken

Baked Salmon Fillets Dijon

My boyfriend I LOVED this recipe. The only thing I did differently was substitute honey mustard for the dijon and I added some minced garlic. Also, I had to bake it for a bit longer as the salmon didn't flake easily in such a short time. I made it with an side of asparagus, which I sauteed in almost the same mixture, minus the honey mustard. Delicious!

Honey Lime Tilapia

I changed the veggies to bell peppers and green squash, my friends and I aren't fond of the suggested veggies. This was tasty and a great way to make the fish. The veggies had flavor, but weren't that great over all. I'll do fish this way again, but next time I'll leave out the veggies.

Garlic Fried Rice

I did add a little extra garlic because I am addicted to the stuff. It was really tasty and easy to make. My boyfriend loved it and couldn't get enough. I will definatly make this again.

Almost Stuffed Peppers

This didn't taste likt the stuffed peppers I'm used to at home, but it was still really really good. My boyfriend and I made it together in a dorm kitchen so it is really easy to make. We used a can garlic and onion flavored tomatoes and that really added that extra kick. We will definatly make this again. It was great.

Kentucky Grilled Chicken

I scaled the recipe down to 4 servings and added about 1/2 cup of dark brown sugar...it added sweetness to the spicy/tanginess (my preference I suppose). Grilled up nicely with good color, and juicyness.
