Shrimp Scampi Bake

Definitely a keeper. My husband and both teenagers liked it. I used frozen, peeled and deveined shrimp instead of fresh, and heated the butter mixture in the microwave instead of on the stove top. This reduced prep time to about 5 mintues. I had to double the time in the oven because I didn't thaw the shrimp first.

Iced Pumpkin Cookies

Delicious cookies! I did make some healthier substitutes: I used Splenda instead of sugar, used 2 egg whites instead of 1 egg, added 1 cup unsweetened applesauce, 2 cups canned pumpkin puree and eliminated the flour and used 4 cups oats. I used a soup spoon to keep size consistent and baked for 12 minutes. They will be softer because of the applesauce, but hold together nicely when cooled. For my icing, I used confectioners sugar plus Coffee Mate's coconut cream flavor liquid creamer to add a little flavor to the cookies. Got rave reviews, especially from my diabetic friends!

Chicken and Potato Soup

A good basic recipe. I ommited all the vegetables and added shredded cheese. I think I combined the basics of this recipe and the basics of another souple, golden potato soup on this website. Sounds like a good soup though

Stuffed Peppers

We do not like green peppers. I was looking for something different to do with ground beef so when I found this recipe I thought why not. My husband was not in favor of the meal until I showed him the recipe. When all was eaten ( it was really all gone) he said that this meal was a keeper and to put it in my meal rotation. I did not make many changes and I kept snacking on the unused filling!

Orange Peel Beef

Great recipe Diane! I don't eat beef but I do taste and we all thought it was wonderful. Followed your directions exactly with no changes but next time I may try it with chicken so this gal can enjoy it too. Thank you!!

Gnocchi with Sage-Butter Sauce

I made a ricotta gnocchi from this site which went perfectly with this sauce. Wish I had had fresh sage, but the dried worked out nicely. Very good and loved by my family. Thank you!!

Ricotta Gnocchi

Changed this up a bit by using two containers of ricotta, a little more flour of course and eliminated the eggs as I wanted a lighter gnocchi. This was my first attempt at making these from scratch, so I was a bit intimidated, but it really was very easy, however, time consuming. Well worth the effort tho as they were truly delicious. I didn't make the sauce, but used a sage and butter recipe also from this site. Fun to make and thank you so much!!

Applesauce Bars

Excellent...made in a 8 inch brownie pan for a thicker bar....texture was more like a cake. The taste was great even though I did not use the glaze and the amount of spices was right on. I also used my homemade applesauce for this. My family inhaled it. Will definately make again!

Easy Biscuit Mixture

Because I've had the printed out recipe for awhile, I was unable to read everyone's reviews. I'm a beginner cook, and unless it is specifically spelled out for me, it took me some time to figure out a liquid (milk) had to be added. (I don't have Bisquick box to check measurements, nor was my computer accesible) So I just guessed on the milk amount and the oven temperature. The taste was bland and crumbly. I am rating the recipe and since there are instructions missing, I am giving it 2 stars. I shouldn't have to read everyone's reviews to see that there are ingredients and steps missing.

Pumpkin Turkey Chili

YUM! I read through all the reviews and added a can of black beans, a bag of frozen sweet corn, cinnamon, nutmeg, bay leaves, and a dash of tabasco sauce. The longer it sits, the better it tastes as the flavors have time to blend. I served it with homemade cornbread. Just the right combo of sweet, spicy, and salt.

Savory Crescent Chicken

Would probably work better with large Pilsbury biscuits...the rectangles were very messy. Needs a bit of flavor, will try again with some cheese and pizza seasoning.

Baked Buffalo Wings

Fish Tacos

I love love love these tacos. Since I am not big on eating fish, this is the way for me to go. I like things spicy so I do add hot pepper sauce to the fish and crushed red pepper to the sauce. I am going to make some more of these this weekend.
