Chocolate Cream Pudding

tastes great..but i think i did something terribly wrong. however i can't figure out what i did. i couldn't get the chocolate to melt for a long time..and so when i was done with everything, i put it to chill..but 40 minutes later, and its liquidy still..i could drink it. im not sure what i did wrong. i would probably try this again. also found a piece of egg yolk in the "chocolate soup". this is probably something i did wrong though so no offense meant to you mimi.

Family Style Mac & Cheese

This recipe was pretty easy and tasted good...just wished it was more cheesy. It did remind me of KFC's mac n cheese but theirs is creamier and cheesier. Would make again but would add more cheese.

Coconut Custard Pie II

i don't like coconut custard pie, but my family does and i made this for them. they loved it. one guest was calling dibs on the remainder of the pie after his first bite, so it was way better than the store bought shoprite brand that my family usually has. thanks for a great recipe.

Super Moist Pumpkin Bread

excellent. went over so well for thanksgiving. i subbed applesauce for the oil and coconut milk. i omitted the coconut flakes and walnuts. next time i think i'll add raisins, it seemed like it was missing that taste. really good, really easy, fantastic base recipe. will use again and again.

Tropical Pork Chops

This was fantastic! I made for my family and they demolished almost all of it. The only changes I made were to make in the oven. I had to double the recipe, so the stovetop way didn't work. I prepared the sauce on the stovetop, but the chops were made in the oven. Once they were halfway done, I poured the pineapple juice from the can over them, then the sauce. I let that bake for about 30 minutes, then I put the pineapple pieces in and let it bake for another 15 minutes. It was late, and I was baking on a high 425, so if you have time, you can lower your temp and lengthen your baking time for maximum tenderness (mine was tender though). I will definitely make again.

Butternut Squash Casserole

I wish I could rate this more than 5 stars! My family LOVED it. It was my first time using butternut squash, but won't be my last. I only substituted the margarine with butter and glad I did. I used an 8x8 pan which yielded a much thicker custard. On other suggestions, as well as my 11 year old, I will try some cinnamon and nutmeg next time (which will be really soon).

Sour Cream Pound Cake

This is a great basic cake recipe, but like a lot of fans here, I doubled the recipe to use a tube/Bundt pan instead of a loaf pan, added 1 1/2 t. vanilla extract, and used the eggs with Omega 3 added. I also suggest the use of the sprays with flour/fat mixed together(like Baker's Joy), as they get the crevices in fancy designed Bundt pans very well(even if they're nonstick pans, they can stick!).

Rich-a-licious Sour Cream Pound Cake

I'm giving it 3 stars because while it's a delicious cake, but there's too much fat with this recipe. I modified this by substituting Omega 3 brand eggs (25% less fat), and low fat(NOT fat free) sour cream. I left the butter because there is NO substitute for butter. My grandmother LOVED it with my substitutions, and has been after me for more(it was her birthday cake).

Lemon Lover's Pound Cake

This is a very good recipe! The right amount of lemon and the sour cream adds to the tang. I did lower the amount of sugar in this recipe, as 3 cups of granulated sugar is a bit much. I've used 2 1/4 cups of sugar with positive results. I've also experimented with using a freeze dried lemon product that comes in packets (there is also lime and orange flavors too) to replace some of the lemon extract, which I find tastes metallic. I've also tried lemon oil, which works great too.

Mmm-Mmm Better Brownies

This is the recipe I've been using to bake brownies for well over a decade now, even before I attended culinary school! I notice the latest reviewer complained about the gritty taste of the sugar in the product. I suggest she try either butter or if she wants to cut out butterfat in her diet, use a 1/4 cup of butter and make the rest vegetable oil, or stick to all vegetable oil, but do the following anyway: Microwave it for 1-2 minutes or until it melts(or oil is warmed). Add the sugar to the warm/hot butter/oil, and this melts the sugar. Better yet, try honey! I've also taken out as much as a half cup of sugar out of the recipe, and it works fine. Microwaving or heating the oil causes the sugar to melt slightly, and if she uses a wire whisk to mix, it can also help to blend the butter, sugar and eggs together more smoothly. Don't ever give up on a recipe after one try, because it's not a fair assessment of it. Anything can cause a recipe to "fail" (the temps outside, the oven too hot/cool, not familiar with the recipe) in the first try. I urge her to try again, and maybe try some of my tips.

Classic Cuban Midnight (Medianoche) Sandwich

This is the real thing folks. I'm of Cuban descent and live in Miami and this is a wonderful recipe. I would argue that mayo is not an original ingredient in a Medianoche or a Cuban Sandwich but you can always leave it out. I make these for parties, cut the sandwich into fours, put toothpicks through them and place them on platters. They are always the first to go. Great Recipe!

Spanakopita (Greek Spinach Pie)

I used this recipe as the base for my spanakopita, but grafted on some of a different one. I added 1/2 cup green(spring)onion and a medium leek(cleaned and chopped)to the white onion in the recipe. Instead of making one big pie, I made individual ones by using (at least)3 layers of phyllo(each one brushed lightly with a mix of butter and olive oil)and wrapping them into a triangle. It's a great dish, and a good way to get veggies into the kids!

The Best Meatloaf

I used this recipe to make my first ever meatloaf. It was a total success. I didn't have steak sauce exactly, so I used some barbecue sauce with some Worcestershire sauce. My pan was a dual layer pan with small holes in the top pan to drain some of the fat from the meat. Awesome. I wonder what ground up tortilla chips would be in the mix instead of breadcrumbs???

Lemon Chicken Soup II

This recipe is pretty good, and I've come up with a few variations. For a different taste, add a few cloves of garlic(to taste, I like 2 or 3), and instead of lemon juice, try lime. It feels, smells, and tastes good, especially when I have a cold or it feels like one is beginning. If I'm getting sick, I add even more garlic and lemon or lime to it!

Mushroom Pork Chops

I followed this recipe exactly and it was awesome. My fiancee and I loved this dish, it was tender and the mushroom sauce along with plenty of sauteed mushrooms was fantastic. i served this with some green beans and some roasted red potatoes. This is going to be a mainstay in my cooking rotation.

Cranberry Oatmeal Cookies

my brother made these cookies for Christmas. WOW! they are soft, moist, tasty, sweet, but not too sweet. Just amazing. I couldn't stop eating them, and once they were finished, we've all begun egging him on to make them again. Really tasty! Oh, and replace the butter with applesauce, i'm sure my brother did, he's healthy.

Bran Muffins II

These muffins are awesome. Used applesauce not shortening. Halved the salt. Whole wheat flour instead of white. Moist, full, but not heavy. So tasty!!! I've never made muffins before, but these came out so good, I'm going to be expanding my muffin making. Excellent, thanks for the recipe. Way better than some fatty version from DD.
