Carrot and Tuna Bites

Easy and delicious. I threw some onion and celery into the food processor along with tuna & mayo. I dusted with some dried dill before serving.

A Pad Thai Worth Making

I have fixed feelings over this one. I have never made Pad thai at home before. I have had it many times at Thai restaurants though. First off, I didn't have the oyster sauce and Asian chile sauce. I subbed w/ cocktail sauce (because I saw another recipe out here that used KETCHUP!) and Thai Red Curry paste, as that was all I had on hand. I doubled the sauce, and tasted it after making. It tasted too much like the cocktail sauce! I panicked. So, I threw in some sesame oil and soy sauce. That did the trick. Saved! Other than that, the noodles took way too long for me, as I was using leftover chicken, so this should have been a very quick recipe to put together. But, having to wait for the noodles to soften was a pain! Not a bad recipe, and I have plenty to have for lunch. I will make again. Thanks for the post Fatty!!

Chewy Brownies

I can only give these 4 stars as I made them, but I am positive they are 5 stars all the way. I took another's advice and added a bit more corn syrup, and mine are very wet on the bottom. They are chewy on the inside and crisp on the outside. I was worried with the amount of eggs, thinking they would be more cake like, and they aren't. I will make this again, reducing the amount of sugar a bit, and not adding any extra corn syrup. I also had to cook much longer than the 25 minutes, more like 45 for me. They are already half gone and I just made them last night! Thanks so much for the post, these are going to be my go-to brownie recipe from now on.

Chocolate Cornstarch Pudding

To me this has a slightly bitter after taste. I also used slightly less cornstarch as suggested by others, and it is a little soupy for me. I might try to make again.

WOW - this is awesome!! I scaled down, and used brown rice. I also used a package of Goya seasoning instead of the seeds. I cannot wait to have leftovers!! This will perfectly satisfy my craving for rice and beans from my favorite restauant. I used pork and chicken. I will make this again. Do try this, it will not disappoint!

Mother's Ham Casserole

This was pretty good. A nice way to use leftover ham. I fried the potatoes, onions and peppers instead of boiling them. I also used fresh mushrooms and 1 bag of frozen broccoli/carrot mixture. I didn't use the celery. The frozen veggies made this a bit loose, but it still tasted good. I also didn't use the breadcrumbs. Might make again.

Buttery Carrots 'n' Onions

I really do love this as a side dish, and normally I do not serve cooked carrots as I am not particularly fond of them. I used 1 lb pkg of baby carrots and 1 sweet vidalia onion. I will make it again, however, scale down some.

Semmelknoedel (Bread Dumplings)

These turned out exactly like my mother-in-law's. I will flavor them a little bit more next time, and also use 2 loafs of bread, as this only made about 7 knoedels. I will make again for sure, and thanks so much to the submitter as I now have written directions rather than just a verbal recipe from my m-i-l.

Fresh Fig Cookies

These are very good. Very soft and cake like. If I do make these again, I'll put in a small cake pan. I didn't have any cloves, so I had to omit. I did put in 1/2 tsp vanilla. Now I just have to hope my neighbor gives me more figs!

Viva Madrid Spanish Chicken

This was very, very good. I had a lot of peppers from my garden, so I used them in here too. I didn't have dates, so I subbed fresh figs. I did not use all of the chili powder for picky kid. I also seasoned the flour before dredging. I will make this again. Thanks for the post, fivestardramamama!

Bow Ties with Sausage, Tomatoes and Cream

This was very good, and easy to prepare. I only used a 14 oz can of diced tomatoes, undrained. I didn't put the crushed red pepper in the cooked dish, but added to my plate. Added plenty of freshly shredded basil and some grated parm. and you're good to go! I only wish I could have found FF H&H to make this with tonight. I feel incredibly guilty eating this, but it was oh so good!

Macadamia-Crusted Sea Bass with Mango Cream Sauce

My DH and I liked the fish alot more than the sauce. I used fat free half & half. When I tried making the sauce the first time, it curdled. I then rinsed the mango off, and boiled in a little bit of water with lemon juice and rum. I then pureed in food processor. I put it back in the pot with 1/2 tbp of butter and added the FF H/H and warmed. I must have bought the driest mango on the planet, because this one was not what I was used to. That being said, we both did not like the sauce nearly as much as we liked the fish. I served with fresh sauteed asparagus, salad, and an excellent white bourdeaux. I used haddock, because sea bass in so expensive here, although we do love it. I save that for the restaurant scene. Thanks for the post. I'll use the bread crumb mixture again.

Marinated Grilled Shrimp

This was a winner in our house! I used ketchup instead of the tomato sauce. Very easy to prepare. Very easy to get addicted to. Served with broccoli with garlic & cashews from this site. Can't get enough of that either! Do try, you won't be disappointed.

Broccoli with Garlic Butter and Cashews

Wow! An hour after dinner and we still cannot stop talking about the broccoli! Served with shrimp & rice. Will make this over and over again. I did add a bit of cornstarch to thicken. Perhaps I will cut down on the butter slightly next time too, to make it a bit less fattening.

Spinach Chick Pea Curry

This was very good. Had it been a little bit *less spicy* it could have been like my favorite Indian restaurant. I added extra gram masla, red cayanne, and cumin. But, it was delicious and very, very easy to put together. I didn't use spinach, tofu or the basil. Didn't have, but I don't think it mattered. I also used fresh crushed garlic instead of the powder. My DH liked also. I might make again, but with so many others to try, I might move on to another. Thanks for the post!
