Jalapeno Poppers I

Reviewed: Aug. 15, 2008
Very good. No need to dredge in flour as other reviewers suggested (if you're subbing breadcrumbs, at least). I actually found that they stuck better without dredging. Served at a birthday party with Pepper & Apple relish (bought at Pepper Palace). Perfect combo!

Aargau Carrot Cake

Reviewed: Aug. 10, 2008
I liked this cake a lot. It is very different from the carrot cake I'm used to but it's good. Had a nice crisp texture on the outside but was moist on the inside. I added a sprinkle of nutmeg, used 1/3 c sugar, and didn't use the frosting (made it for my 1 year old). It was a good sneaky way to get in those carrots!

Pumpkin Pie for Dieters

Reviewed: Jul. 13, 2008
I LOOVVEE pumpkin pie and this is stuff is pretty darn good! I used fat free sugar free instant cheesecake pudding and canned lite whipped cream instead of cool whip (hydrogenated oils, ick). The consistency was good, not too runny and not too thick. I plan on adding crushed graham cracker to the top before serving after dinner!

Bagels I

Reviewed: Jul. 5, 2008
I've been baking since I was 13 and never tried to make bagels. This was a great recipe to start with! Shaping takes a little practice to get that perfect look. I turned up the oven to 400 the second time. The only real problem I've had is not being able to keep up with the requests for more from friends and family!

Addictive Sweet Potato Burritos

Reviewed: Mar. 16, 2008
These are a staple in my house - I make a big batch and freeze them. I use WW tortillas and low sodium soy sauce. I have made them both with black and kidney beans, and I prefer the kidney beans. These are healthy and delicious!

Mmm-Mmm Better Brownies

Reviewed: Mar. 16, 2008
We LOOOVE these brownies! I added a little more cocoa powder (used Hershey's Special Dark) and some semi-sweet chocolate chips. Ooooh yeaaa.

Sweet Cottage Cheese and Bananas

Reviewed: Mar. 16, 2008
Good. I use a little sprinkle of cinnamon in it, too. It tastes best with riper bananas.

Vegan Bean Taco Filling

Reviewed: Mar. 16, 2008
Pretty good, VERY simple! I opted to mash the beans in the pan after I had sauteed the onions, peppers and garlic. I hate dirtying multiple dishes if I don't have to. My boyfriend was skeptical at first but ended up loving it as well.

T's Sweet Potato Fries

Reviewed: Feb. 15, 2008
We eat these all the time, delish! I cut the sweet potatoes up so that they're only about a quarter inch thick, and only put them in the microwave for one min with no water. They don't ever really come out crispy, but they're awesome w/ketchup!

Broiled Tilapia Parmesan

Reviewed: Feb. 15, 2008
Easily one of our fave ways to make tilapia. Even my boyfriend gets into this one, he made it on Christmas for his parents (and he does not cook, EVER). So good.

Chicken Stock

Reviewed: Feb. 15, 2008
Good stuff, I love the effect of the ginger. Next time though, I will have to make it the right way. Seeing as I have a 6 month old and can sometimes have "mommy mush brain", I failed to put a lid on my simmering stock (and there is no direction in the recipe saying to do so). Needless to say, I didn't have much when I realized the issue. It was still good, though!

Almond-Crusted Tilapia

Reviewed: Feb. 3, 2008
My boyfriend loved this. Usually he is pretty reserved in his judgements, but the first bite he took he said "Mmm this is good!" I didn't use as much cheese on top as it called for and I thought it was good but he sprinkled more on his. Thanks for the recipe!

Baked Basil Fries

Reviewed: Jul. 30, 2007
My boyfriend loved them but I was a little disappointed that I couldn't taste the fresh parmesan that I used :( The basil sort of overpowered the fries for me.

Delicious Pineapple Muffins

Reviewed: Feb. 15, 2008
For me they were just okay taste-wise, but I gave them 4 stars because I think if I would have just listened to some other reviews and mixed the fruit right into the batter they would have been very good. The texture was wonderful but the batter was bland. DEFINITELY mix the fruit into the batter !
