Liz's Astounding Chocolate Chip Cookies

These cookies are very easy and super soft and chocolatey. I make many different kinds of cookies and these are the ones that I pick when I need to make them relatively quickly. I usually leave them in the oven for about 10-11 minutes, though.

Brownie Tarts

The only reason I take one star away is that I never feel the mixture for the tart cups makes enough; for me, it yielded 18 instead of 24. I just upped the cream cheese, butter and flour a bit and made more. These are a great hit with all of my friends and family. They are a nice surprise. Be careful though; don't overcook because if the cups come out too brown, the insides are a bit chewy. Also, don't walk away from the chocolate and butter while they are melting or the mixture will stick, non stick cookware or not. Great recipe overall.

Irish Soda Bread

Started making this recipe five years ago, as written. I then adjusted to my own taste by cutting the caraway in half (1/2 Tbsp). I use two cups of raisins instead of three (1 cup dark and 1 cup golden raisins, I like the contrast). I make five of these every St Patty's Day. One for me, one for work, one for a friend and two for a coffee shop that sells it! The loaves I make for the coffee shop are baked in giant sized EZ Foil loaf pans 11/75 X 5.5 inches. This recipe fits the loaf pan perfectly. Thank you so much for sharing.

Spicy Black Bean Soup

I made this as written. It was so salty I couldn't eat it. Looking again at the recipe I should have known: 2 tsp salt, 1 tsp celery salt, 2 boullion cubes, and pound of ham - no wonder! I will not be making this again.

Bacon Roasted Chicken

I made this yesterday and my family totally enjoyed it! Especially, since my husband can take or leave chicken, stated that I MUST make this again! It was extremely juicy. I did alter it a bit and added some onion in the cavity and also pur on some rosemary and marjoram. The bacon was delish! Thanx for putting this on here!

Awesome Baked Sea Scallops

This was an EXCELLENT recipe. I normally have not been a big scallops fan, but now, I absolutley love them. The only reason I did not give this recipe 5 stars is, as other reviewers have mentioned, the breadcrumbs, while excellent, should be halved. If you top this with just a bit of the breadcrumb mixture, you will be amazed at the simple yet delicious flavors of this recipe.

Baked Salmon Fillets Dijon

My boyfriend I LOVED this recipe. The only thing I did differently was substitute honey mustard for the dijon and I added some minced garlic. Also, I had to bake it for a bit longer as the salmon didn't flake easily in such a short time. I made it with an side of asparagus, which I sauteed in almost the same mixture, minus the honey mustard. Delicious!

Barbeque Chicken

I'll be honest, the only reason I rated this so high, is because the recipe for the BBQ sauce is so darn good. That's not to say this is bad, it's just that for me, I prefer BBQ chicken on an actual barbecue. As other reviewers have noted, while the chicken does indeed come out "fall off the bone" tender, it comes at a cost. Namely, it is swimming in the sauce, and in my opinion tastes more boiled then barbecued. Speaking of the sauce however...it is an EXCELLENT sauce. I've never made a homemade BBQ sauce before...I usually buy Sweet Baby Ray's bottled sauce, which is also excellent. This sauce compares VERY well with a store-bought sauce, AND it's easy to make. I only made three changes/additions to this: 1) I doubled the recipe, as it wasn't very much, and next time I may triple or quadruple it. 2) I only added 1 TBS of water, as other reviewers mentioned it being runny. 3) I added 1 1/2 TBS of Tomato Paste. I did this because I noticed most bottled BBQ sauces contain this ingredient. I then followed the original directions and cooked it on the stove for 15 minutes, and the sauce came out AMAZING. I think that's one of the keys...a lot of reviewers are skipping the cooking of the sauce and putting it right on the chicken, which I think is a mistake. As for the chicken itself, I personally like a crispy skin on my BBQ Chicken, so this did not turn out well. I do however think this sauce would be AMAZING on an actual barbecue. Super easy, and my family loved it. I used thin cut chicken breasts, and the oven time only took 15 minutes for super moist chicken! Next time I will venture out and try another flavor cheese spread, maybe roasted red pepper?? Delicious! You know it's good when the kids compliment it!

Busy Day Barbeque Brisket

Okay this is the first recipe I've ever given a poor rating to. I can't believe it considering all the great comments here. I prepared the recipe as written, being careful to use a 3lb brisket and measured out all the ingredients. It turned out WAY too salty, dry and spicy. If you are considering making this my advice would be to add a cup of water to the sauce and leave out the salt and cayenne. There is more than enough salt in the liquid smoke and BBQ sauce. I will not be making this again.

Cedar Plank-Grilled Salmon with Garlic, Lemon and Dill

This was my first time planking but did we love it. Soaked the plank fro about 6 hours. Substituted the dill for rosemary (chopped up). Cooking time was 18 minutes. (I only peeked once and had to spray a bit of water on the plank to make sure it wouldn't flare up) As I needed to serve 4 (2 adults and 2 kids) I only had 1.5Lbs of salmon but I could just as well bought 3lbs. When I brought the fish in the house my wife said it smelled like a real restaurant. The kids asked if I could make it again tomorrow and the day after and the day after.

Amazing Pork Tenderloin in the Slow Cooker

Unsure what red wine to use we decided on a Merlot, our favorite red wine to drink. Our roast was bigger as the one in the recipe so we had to change the amounts a bit and ended up with almost covering the roast with the liquid. We cooked it for 7 1/2 hours on low. It was really good. Next time we'll probably add some garlic in the roast to flavor it even more.
