Grilled Salmon With Orange Glaze

This is very sweet, but my family loves it! It's always nice to have a fish dish that everyone can agree on! My daughter especially loves the glaze on grilled chicken.

Too Much Chocolate Cake

What can I say that hasnt already been said? What a great recipe!! I'm not a big chocolate cake person, but this one has me nibbling slices (and if properly eaten over the sink, the calories dont count!)

PHILADELPHIA Farmhouse Chicken Dinner

Hot Artichoke and Spinach Dip II

This was just okay. I added a little extra mozzarella (I like a very cheesey dip) and an 1/8 tsp. cayenne for a little heat. I was not pleased with the consistency of this dip. I was hoping for something a lot creamier. I had 3 dips out at the same time, and although people said they liked this one, it did not go. The next day I doctored it up with 1/4 C. sour cream and 1 C. monterey jack cheese, reheated it, and it tasted better and had the creaminess I was looking for, but I still ended up throwing almost the entire thing away. I'm very glad I didn't double it.

Hoagie Dip

I halved this recipe and it still made a ton! Fed 6 adults, and there was still a lot leftover. I added 1 T. red wine vinegar. The dip was incredibly good, did taste exactly like an Italian Hoagie, but was not my favorite dish out that day. However, all of my guests were freaking out over it! And, one of my best friends said that I have to bring it to any party she has in the future.

Hot Pizza Dip

I can't believe I forgot to take a picture of this! I don't have a microwave, so I baked it in the oven for about 25 minutes at 350, and the house smelled sooooo good! I mixed the cream cheese mixture together the day before, and also did not measure the green pepper, pepperoni, and black olives ... just eyeballed it according to my own personal preferences. I served this with homemade crostini, and it was the yummiest appetizer I had out that day! And, it's so easy! My new favorite!!

House Fried Rice

This is better than restaurant fried rice! I have made this a couple of times. I always use smoked pork in place of ham (personally it tastes more authentic that way). Also, I love soy sauce so I use waaaay more than the recipe calls for. I have served this to friends and always get great reviews .. the last one was, "This is better than the Chinese store!" Yes, he actually said "store." I have used fresh cooked and leftove rice (jasmine), but didn't notice a difference. I also add a little green onion.

Coconut Custard Pie IV

Oh yeah. This is the stuff. Soooo incredibly good! I sprinkle a little coconut and nutmeg on the top. Served this at a family dinner and everyone loved it! My "go to" coconut custard pie.

Cheddar Bay Biscuits

Oh wow, these were good! I used a lot more cheese, added a little Old Bay, and brushed the butter mixture on the biscuits before and after baking. The only trouble I had was working with the dough ... it was incredibly sticky, but soooooooooooo worth it! Served them with Christmas Eve Beef Stew (which was also fantastic!), and everyone loved them!

Mushroom Kabobs

These are delicious! I use baby bellas and skip the peppers (bf can't eat them). I usually pair these with steak, a baked potato, and broiled brussel sprouts. Very, very tasty!

Broiled Tilapia Parmesan

I've been making this recipe for about a year and can't believe I haven't reviewed it yet. Anybody who knows me knows that I would rather gouge out my own eyeballs with a fish hook than actually eat a fish, but this recipe is incredible! I love it!! The topping melts into this crust that is deeeeeeee-li-cious! I could eat this every week! I do use peccorino-romano cheese in place of parmesan, and leave out the celery salt (personal preferences). I usually pair this with a garlic butter rice and sauteed asparagus.

Cocktail Meatballs II

These little meatballs are fantastic and a crowd pleaser! I don't like the sweet and spicy sauces made with grape jelly, so I substitute black cherry All Fruit, with incredible results! I used the Try Me Tiger Sauce, which adds just the right amount of heat (to satisfy your palate, play around with the measurements of jelly and hot sauce). Also, I used EVOO to brown the meatballs because I never have shortening in the house. Wonderful, wonderful recipe!

Downeast Maine Pumpkin Bread
