Awesome Slow Cooker Pot Roast

Pork Chops with Raspberry Sauce

This was delicious. I brushed the pork with a little raspberry jam/OJ mixed together before rubbing in the spices, grilled it instead of cooking it on the stove, and basted them a few more times with the jam/OJ during cooking and they came out perfect. The sauce was very nice and complimented the pork well.

Chile Garlic BBQ Salmon

My family loved this recipe! I used 1 tsp powdered ginger instead of fresh. I also placed the fish on top of sliced red peppers and baked it in foil in a 425 degree oven for 20 minutes. Opened the packet up for another 5. Served it with rice pilaf and sliced tomatoes and cucumbers.

Alaska Salmon Bake with Pecan Crunch Coating

This was absolutely delicious! My boyfriend, who doesn't eat fish, actually ate two pieces! My only substitution was to use dried dill in place of the parsley, which I forgot to buy. Served it with Couscous and fresh green beans. I will definitely make this again!

Slow Cooker Thai Pork with Rice

I *LOVE* this recipe. It's my favorite way to cook pork in the crock pot. Sometimes we add pineapple chunks or sliced carrots for an added level of flavor. It's delicious!

Grilled Pork Chops with Fresh Nectarine Salsa

I felt like Goldilocks and the three bears with this recipe. I made the salsa as per the recipe, but ... my stepson thought it was too sweet, my stepdaughter thought it was too spicy...and no one thought it was just right.

Raspberry Lemon Muffins

These muffins were delicious and very well received! I used low fat lemon yogurt, the lemon extract, and juice and zest from one medium lemon. They were perfectly lemon-y, and I have been asked to make them again.

Creamy Au Gratin Potatoes

Wonderful potatoes! Used 1 cup skim milk, 1 cup fat free half and half, and upped the (sharp) cheddar cheese to 2 cups (it's what I had in the 'fridge). Oh, and I did mince the onion, just because I'm not used to onion rings in au gratin potatoes. Perfect comfort food. I had to cover mine for the last 40 minutes of cooking because it was getting too brown on top, and it cooked perfectly! YUM!

Dijon Crusted Halibut

Fantastic! Used tilapia instead of halibut because it's what I had handy, and panko crumbs for the topping on top of the coating for a little extra crunch. I did put the pan under the broiler for the topping to brown. Yummy, yummy fish! I served it with creamy au gratin potatoes and creamed spinach.

Ham with Honey and Brown Sugar Glaze

This was very good, but my glaze didn't thicken up either. I probably could have tried the cornstarch trick, but was too hungry! Regardless, it was delicious! I served this with Diane's Colcannon and steamed broccoli.

Ziti Alfredo with Vegetables

This recipe is fantastic! I love that it is so flavorful and also uses low fat ingredients! I had to use penne because I didn't have any ziti, and I'm sure that this recipe would hold up to many substitutions (i.e. different veggies, spicy additions). I served this with the Breaded Ranchy Fish Fillets, and it was a perfect side dish. The pasta really soaks up the sauce, so when re-heating I added a little milk and some chopped tomato (which I was cutting up for a salad the following night). This will be in my regular rotation!

Peanut Butter Cup Cookies

Oh wow! Decadent! Everyone was asking for the recipe. The trick is the mini muffin tin. It makes the cookies so cute and so insanely good. Like a peanut butter cup completely wrapped in peanut butter cookie. They only need 8 minutes in the oven. They don't look done, but they are. I did use the tip of freezing the peanut butter cups, and the tip to put the tray of cookies in the refrigerator for about 10 minutes after they come out of the oven. I get about 36 cookies out of this, and my tin only holds 24, so I have to use the tray again, and the 10 minutes in the 'fridge cools the cookies enough to get them out easily, and makes the pan cool enough to handle.

Giant Chocolate Chip Cookie

Incredibly good! Insanely rich! I can see why some people would say to reduce the chocolate chips a bit, but I didn't and probably won't in the future. Was a hit at my nephew's birthday dinner! I used a 16" pizza pan, formed the dough and spread it out to the 14" line, but the cookie spread almost all the way to the edge of the pan.

These are fantastic! Whenever I bring them somewhere, I am always asked for the recipe! A little crisp on the outside, chewy on the inside. They only need about 8 or 9 minutes in the oven, even though they don't look quite done, they are. I do make 2 changes: I use 1 cup butter because I don't buy shortening. And, the cream of tartar taste is a little too much for me, so I've reduced that amount to 1 tsp. Wonderful, wonderful cookie!

Too Much Chocolate Cake

What can I say that hasnt already been said? What a great recipe!! I'm not a big chocolate cake person, but this one has me nibbling slices (and if properly eaten over the sink, the calories dont count!)
