Downeast Maine Pumpkin Bread

This was delicious! I followed the recipe exactly and then topped it with cream cheese frosting. I made one loaf of bread and 8 muffins! This will be my staple pumpkin bread recipe from now on.

Caesar Salad Supreme

Hubby loved this and really appreciated the fact that I made a caeasar salad entirely from scratch! I followed the dressing recipe to a "T", but I added a little bit of italian seasoning and parm cheese to the croutons and baked them in the oven.

Bread Pudding I

This was very good as is, but I did add a little extra milk, b/c I like my bread pudding a little mushier. I will definitely make this again!

Creamy Chicken and Rice Soup

This was good, but very thick. You could actually serve it on a plate! I will definitely make it again, but I will use more liquid than what the original recipe calls for. I also added a tablespoon of sugar (hubby loved it)!

Country House Bed and Breakfast Casserole

This turned out GREAT! As most of us do - I try to cut back here and there. Where it called for butter I used "I cant believe its not butter" and I made my own croutons (baked). I heard its healthier to do so (store bought ones are fried. I used low fat cheese & milk! YOU WOULD NEVER KNOW! Great recipe..... Thank You

Campbell's Kitchen Creamy Chicken Enchiladas

Fantastically yummy, really satisfied the mexican food craving; Only used 1/2 cup of sour cream, which was more than enough. Baked chicken breasts for 20 minutes at 400 then used fork to shred the chicken for the recipe, used 6 inch old el paso tortillas (more pliable than the Mission ones), heated some of the extra picante sauce and served over top the finished dish to cut some of the creaminess of the dish, served with chopped lettuce, refried beans, and made the Mexican I rice dish from the recipes here. Ahh, full happy belly. Oh, used home-grated Heluva good Colby-Jack cheese. The pre-shredded cheeses just don't melt as well, get kinda plastic-y when cooked

Penne with Chicken and Pesto

I followed the recipe exactly as it was stated and it was very good. Next time I plan on using half and half to make it a little healther. I may also toss in some red pepper flakes and roasted red peppers for some color.

Monterey Jack and White Bean Dip

This dip is great! I don't have a blender or food processor, so I used a potato masher to mash it all up. Used an extra 1/2 cup of cheese in the dip, and put a 1/2 cup on top and popped it in the oven for about 20 minutes. My dip was verrrrrry runny (I don't know if that is because I didn't blend it), so next time I make it, I will probably scale the broth back to 1/4 to 1/3 cup. I served it with homemade crostini, tomato slices from the garden, baby carrots, and bite-sized celery pieces. Yummy!

Rum Balls I

I just made these and they are delicious! I used a spiced rum I purchased on my honeymoon in St. Lucia. I can only imagine how wonderful they will taste in a few days.
