Stuffed Zucchini I

I used an eight-ball zucchini from the garden which is shaped more like a pumpkin, so it came out looking great. But the filling -- not so great. It was VERY oily. I siphoned out about 2 TBSP of oil before eating it. And it was definitely missing something. I think the ground beef suggestion might be good. I'll try some MorningStar crumbles IF I try this recipe again.

Mama's Best Broiled Tomato Sandwich

I made this on a cheese bread and it was delicious. I do put a really small rack or turkey drip dray under it though in case my tomatoes are too juicy. It's not as good with soggy bread.

Easy Arugula Salad

Chocolate Fudge Cookies

When I was dropping them on the baking sheet I was afraid that they were waaaay too oily, but they came out okay (I really like a chewy cookie). If you're not into really chewy ones, try using butter instead of the oil. Also, I used Duncan Hines Dark Chocolate Fudge mix. Yummy!

Pork Chop and Feta Skillet

By far, the best pork chop I have ever eaten. This is amazing and it will probably become one of my staple foods. I used a fairly well-seasoned cast iron pan and they seared beautifully. I used the jarred minced garlic with a little bit of it's juice. Wonderful!

Honey Lime Chicken Wings

Very tasty. My husband said that he is opening a restaurant and locking me in it. We're having it again tonight by the way...And a cooking tip if you've never fried before. Use a candy/frying thermometer and heat the oil to 320-340 degrees. Then put your chicken pieces in and cover, cooking on high until they're browned on both sides. Then reduce the heat to med-low and cook, covered for another 30 mins. You don't want to turn the chicken more than 3 or 4 times during cooking. Happy Frying!

Apple Dumplings I

A tad too doughy, but still very tasty. I sliced the apples and coatedthem with the cinnamon sugar before rolling them in the dough. Next time I will put 2-3 slices in each piece of dough before rolling up. Also, I used two cans (7.5 oz) of the smaller buttermilk biscuits so I had more than just 8 biscuits. All in all... yum!

Pepperoni Polenta Pizza

After reading the reviews, I tried baking the crust alone while the oven was preheating and while I sauteed my veggies, but the crust was still too soggy. Definitely come armed with forks and knives. It did have a good flavor though. I told my husband that we were having pizza, which I was afraid may have been a big mistake, but he actually enjoyed it. I think I'll make it again. And it does not serve six. More like three if you have something else on the side. The two of us easily ate it all.

No Fail Pie Crust II

I'm not sure why mine was so different. I've never had a problem with a crust, but I haven't found a recipe I love either. This one though, was by far the worst for me. It was entirely too mushy. I ended up adding another 1/2 cup to a full cup afterward just to make it hold. Also quite a bit of shrinkage and there was something very unpleasant for me about the scent of the lard, which remained slightly even after baking. Not a winner for me.
