Kalacs (Hungarian Cinnamon Swirl Bread)

Reviewed: Jul. 9, 2009
This was pretty simple to make using my Kitchen Aid mixer. I proofed the yeast in my mixer bowl with the warm milk and sugar for ten minutes, then added the whisked egg, vanilla, and butter. After that had combined well, I added the combined flour and salt. After that had combined, I took the submitter's advice and added dried Craisins. I had to add an additional 1/2 c. flour to get the dough to jump on the hook, but once it did, I let it knead with the hook for about five minutes or so. I then let it rise in a greased metal pan on my warm oven, covered with a moist towel, for an hour. After that, I divided the bread into two loaves, rolled it out and added the butter and brown sugar. I formed it into loaves and set them in the loaf pans and covered them again with the moist towel and let them rise for a second time for about fourty-five minutes. It only needed to bake for about a half hour. I don't usually time my breads, you just kind of know after a while. They smell done. This was a fun bread to make and smells out of sight when baking. Quite the stress reliever. No way you can be upset when smelling a wonderful sweet bread baking! Thanks, Valerie. NOTE: I did use unsalted butter, lowfat buttermilk, organic flour and brown sugar Splenda. For those of you who are timid bread makers, just go for it. I used to be, but now I really enjoy making bread by hand. Use your Kitchen Aid. It cuts your work in half!

Banana Crumb Muffins

Reviewed: Jul. 9, 2009
So I tried this recipe again since it's one of allrecipes.com "MOST RATED RECIPES". And once again dissappointed. I was looking for something that had more depth to the flavor than the basic 'ol banana bread. And while the crumb topping adds a little somethin' to these muffins, it doesn't penetrate through the flavor. Just kind-a is there. So unfortunately I am going against the grain and dissagreeing with A LOT of people. I so prefer the Banana sour cream bread on this site. Maybe it's just a matter of taste, but I thought these muffins were 'o so boring.

Mexican Tinga

Reviewed: Jul. 9, 2009
Very easy and very good. After reading that cinnamon is a traditional spice for tinga, i too added a cinnamon stick while it simmered.....A whole can of chipotles?? Is that a joke or just a typo? I can not imagine what an entire can of chipotles will do to ones mouth!! I only added 3 peppers and i thought even that was really spicey. Anyways, loved this and will make again :)

The tomato and vinegar combo give the shrimp a sweet kick while the basil adds another layer of flavor. Very nice!

Award Winning Soft Chocolate Chip Cookies

Reviewed: Jul. 9, 2009
theese were really good. They are a little cakey but still moist. I only did 2 cups choco chips and kept the 2 cups walnuts. I will keep this recipe for sure but I am still looking for a chewier cookie, kind of like the soft batch cookies you get at the grocery store. but so far these are one of the best cookies i have made. They also spread perfectly.

Chunky Monkey Pancakes

Reviewed: Jul. 9, 2009
I am not a fan of chocolate chips in my pancakes, but the kids that helped me make these loved, loved, loved, them! I loved that they got a little fiber in their pancakes from the banana *and* the great banana flavor. (I made some for me without chips and added nuts) Will definitely make again, both ways. Fun name, and a great recipe! Thank you, crazycatlady!

Dirty Rice

Reviewed: Jul. 9, 2009
WOW!~ So good, I can't believe I waited so long to try this recipe; now I wish I'd found it sooner. Followed as close as I could having to sub. very little: red bell pepper instead of green, 1/8 tsp cayenne pepper instead of pepper flakes and I used other reviewers tip of 1+1/2 tsp paprika and 1/2 tsp turmeric for the annatto powder. I also just used the whole cans of black beans and corn so not to have leftover in the fridge... Everything just enhanced this recipe!.. The crunch of the nuts was good and the twist of lime, red onion and cilanto all came together pefect! I did prefer the red onion minced verses sliced though. Thanks for a great recipe!..

Bacon Jack Chicken Sandwich

This was a great weekday summer recipe. I used a slice of banguette toasted on the grill, rather than a bun. And a Love the dressing from "Southwestern Ceaser Salad" put some of that on the bread before the chicken. Red onions, lettuce, cheese and bacon... My husband thought he was eating resturant fare.

Asian Carryout Noodles

Fantastic!! I was craving Chinese tonight and this recipe hit the spot!! I thoroughly believe that the hoisin sauce made the dish. I have never had bokchoi before and figured it would be a waste to buy a whole head just to use two leaves, so I omitted it. I instead added broccoli, julienned carrots, and a bit of shredded cabbagge and it was fabulous! I like my food spicy so I also added a bit of white pepper for an extra kick. It was such a success that my husband actually got 2nds! Kudos!!
