Pumpkin Soup

1st time I made this, it was a disaster; way too salty, way too thick, and no pumpkin flavor. It must really depend on the exact items you use. The second time around I used vegetable stock instead (and cut back on the onion to compensate) and only added a 1/4 t of salt. I also ended up adding at least an extra cup of water. It came out perfect!

Sugar Cookie Icing

Great recipe. Used 3 teaspoons (that's 1 Tablespoon) of milk instead of 2, and used vanilla instead of almond extract. Edit: After about 12 hours, the cookies started getting light-colored spots on them. By two days, they were all blotchy. I'll try Royal icing next time instead to see if that's any better.

Eileen's Spicy Gingerbread Men

This is the first time I've ever made gingerbread. I doubled the recipe (except that I tripled the baking powder and kept the baking soda the same). They turned out good, although they did spread a little more than I expected. My husband took them to work, and they were well received. People told him that they were the best gingerbread cookies they had ever had, and they said I should just open my own bakery. :)

Easy Peanut Blossoms

While I loathe Hershey chocolate, these are one of my husband's favorite cookies. These were easy to make. My batch actually created >30 1-inch cookies. I won't be afraid to push in the kisses a little more next time as they keep falling out now.

The Best Rolled Sugar Cookies

This recipe is excellent. My air-insulated pan worked best. My regular cookie sheet made these burn a little on the bottom. Oh well. A little imperfection makes them look "homemade" and not like a store-bought cheat! Edit: after a few days, these became kind of tasteless. Like the "freshly-baked" aroma was gone, and there wasn't enough flavor left, like cardboard. :( I may take the advice of another reviewer and add an extra cup of sugar to the batter and try again.

Double Layer Pumpkin Cheesecake

This was oh so good! I added 1 cup of pumpkin because I had so much pureed pumpkin in my house and then just doubled the amount of spices. I also added an extra 8 oz of cream cheese because any time that I have made a cheesecake with less than 3 boxes, I just haven't cared for it. So for personal preferences, I added. I am sure it would have been great without any additions. I did the water bath and NO cracks! :) It was a VERY good cheesecake!

Cinnamon Apple Syrup

This was delicious. I made it according to the recipe and I think I would decrease the cinnamon a bit, maybe to 2 teaspoons. I was a little dubious that it only needed 2T of water, but it worked!

Linguine Pasta with Shrimp and Tomatoes

Delicious! I made this per the instructions plus the additional instructions made in the comments by the original author (adding cream and basil). The only thing I would do differently is use a lighter cream (I don't know what possessed me to use heavy whipping cream, but I did), and maybe less of it. I think I also simmered it a bit longer to get it to reduce a little more...maybe 45 minutes.

This was just ok, we all felt that it was missing something. I double the soup & tomatoes as suggested by previous users. I thought it could use more hamburger (1.5-2 lbs). We also thought it would taste great using Parmesan cheese instead of cheddar. Might be something to try if we ever make this again. I baked it at 375 for 35-45min.

Double Layer Pumpkin Cheesecake

This tastes amazing! I love cheesecake & pumpkin pie. Anything that combines these 2 flavors is just brilliant! I made a few changes as suggested by others.. Used 3 pkgs of cream cheese, almost a whole 15oz can of pumpkin, and was generous with the spices. Dont even need whipped topping, excellent as is. Will definately make for this year's Thanksgiving & try the fat free/splenda version. Yummy!!

Salisbury Steak

This was great. Neither my husband or I had ever had salisbury steak, but we like it. Made it exactly as the recipe was written, except I added four or five sliced mushrooms with the sauce. Wish there was more sauce but I'm not sure how to increase it without actually doubling it.

Skillet Pork Chops with Potatoes and Onion

Hmm. The sauce was a little too strong and salty. Kind of boring. Might make again with some changes. More vegetables like carrots, mushrooms, etc. and less bullion. More spices. Might thicken the sauce to more of a gravy consistency.
