Delicious Ham and Potato Soup

Reviewed: Oct. 31, 2009
This is an excellent potato soup recipe. I followed the recipe to the "T," except for using 1/2 & 1/2 instead of milk. Apparently, I'm trying to eat unhealthily this weekend. It was unbelievably good, thick and rich, just like comfort soup should be. I served this with homemade Runza's for our Halloween supper. Please note, I prepared, twelve servings and it still didn't go very far. I can imagine that eight servings would barely feed a small flock of birds. As written, the volume of this recipe is small. If you have a big family, consider doubling it or more.

5 Minute Candy Bar Pie

Reviewed: Oct. 31, 2009
Will disappear from the table as quick as it is to make. I made 2 oreo pies. I started with Oreo crusts and since I was making 2, I put one layer of cheesecake pudding then a layer of chocolate fudge pudding in each. Topped the whip cream with crushed oreos. Use an extra 1/4 milk in the pudding, it will still set up hard enough, but whip a little easier. Also, if you've got a kitchen aid or an electric hand mixer, use it. Not sure a regular whisk would have done the trick. My choc fudge was too thick so i actually had to pipe it in. Added extra 1/4 milk to the cheesecake pudding it was perfect. Also, it'd be easier if your whip cream is thawed. Mine didn't spread too well on the top since it was still 1/2 frozen.

I love these potatoes!!!! I used cream of mushroom soup this time, but I might try cheddar soup next time since the people I'm serving don't really care for mushrooms! Isn't is great when you find these things out after you cook for them??

Cashew Chicken Casserole

Reviewed: Oct. 28, 2009
Made this tonight -- excellent!! And for a casserole, very light -- not a heavy, bogged down feeling! I agree that since I don't care for green pepper, that easily swaps out with peas or brocolli!. I also used Ritz crackers rather than saltines. Next time, I may add a tad of garlic or something, although it was delicious the way it is. I used diced rather than sliced water chestnuts. Wonderful textures and flavors!! I will definitely make again!

Spiced Pumpkin Seeds

2 cups is not enough! Not the way Ive been eating them anyways! I followed another review and boiled the seeds first, and then I followed the rest of the recipe, except I used butter instead of margarine. and this is the best they have ever tasted in all these years of making them! this is how I will make them from every year on out now!

Stuffed Green Peppers I

Reviewed: Oct. 24, 2009
This was fantastic, and a great dinner for a cold night! I adjusted slightly to add 1 cup of rice instead of 1/2, to stretch the recipe just a bit. I added a little more cheese than the recipe called for, and I didn't have two cans of tomato soup, so I used the one can I had and a can of tomato sauce. It worked out great. Loved the recipe!

Marinated Pork Tenderloin

Was very tasty and tender. I did use another reviewers suggestion and added a little sesame oil in the mix, and in the absence of the nectar I used orange/pinegapple juice. Marinaded for about 3 hours. Came out great!!

Banana Crumb Muffins

Reviewed: Oct. 17, 2009
I had 4 bananas so I thought I'd make 12 muffins instead of 10. I also had a fruit nut mix in the pantry that I thought I'd mix in. Macadamia nuts, dried cranberries and apricots and white chocolate chips. For the topping I mixed in crushed macadamia nuts instead of flour. The muffins are delightfully sweet and flavorful. They rise beautifully and I'm thinking I might eat the whole pan before my husband comes back from golf!

Honey Baked Chicken II

Reviewed: Oct. 17, 2009
Delicious. I used about half the sauce and cooked a panful of boneless chicken breasts and some thighs in an oven bag. I served chunks of the tender chicken breast with a package of Green Giant Immunity blend vegetables (cauliflower, orange and yellow carrots and dried cranberries in a butter sauce) over some angel hair pasta. Great fall flavors. We loved it! With the remaining chicken breasts, I made Fruited Curry Chicken Salad by Karen L. Baker. This was also fabulous. I packed them as wraps in our lunches. I am using the thighs today to make a chicken tortilla soup.

Fruited Curry Chicken Salad

Reviewed: Oct. 17, 2009
Love it! For the chicken, I used the recipe Honey Baked Chicken II by Grechen Ramey (only I used chicken breasts and cooked them in a oven bag). I was making it for dinner and cooked twice the amount so I could make this salad too. This recipe has curry and honey in it and made the chicken super delicious. I used dried currants instead of raisins, because I had them on hand. I would definitely do that again. They are smaller and go a little bit better with the curry flavor than raisins. The colors are great and I think next time I might try red grapes instead and a green apple to mix it up.
