Shrimp Couscous Salad

We loved this, but next time I will make 50% more dressing; it was a little dry. I may also consider reducing the couscous a bit too. I added a packet of Parmesan seasoning to the dressing that came with the couscous and it was awesome. The flavor is to die for though. My wife thought it was great too.

Tangy Shrimp and Scallops

Maybe it's common sense, but how this recipie turns out is largely based on the quality of the shriimp and scallops that you buy. I had fresh, good shrimp, but the scallops were of the grocery store, bagged and frozen variety. This one was good, but we prefer Ron's Grilled Shrimp, another allrecipes selection.

Awesome Slow Cooker Pot Roast

I have made this 3-4 times already! My family loves it! I dont use pork, but use beef. It comes out so tender and so full of flavor. This is my recipe from now on when it comes to making roast! I dont even have a slow cooker, i put it in a pot over the stove on low and just let it cook for hours!

Sweet Potato Pie I

Was fantastic! We added some condensed milk to it and that made it even better! It was a little runny, so instead of adding flour we just added more sweet potato!

Cranberry Scones

These were a very bad thing for my family to have discovered. They are not overly sweet, which I love, and they are addictive. The only change I made to this was to dribble on a little orange glaze over the top of the warm scones, and I think it really finished them off nicely. They remind me of Christmastime. And it helps that my kids eat the heck out of them!

Traditional Pita Bread

I was very happy with the way these turned out. The dough was a little sticky, so I had to add roughly 1/3 cup more flour to make it workable, but it was a very easy recipe. I served it with hummus and a cucumber salad my friend had made, and it worked very well. About half of my pita puffed and pocketed, and I realized that the ones I forgot to flip before baking were the ones that puffed, so now I know how to make American pita pockets, too! I will be making these again soon, my daughter adores them.

Sweet Potato Pie I

Just wonderful! I made it for Thanksgiving this year, and the whole thing got eaten in half an hour. Not too sweet, but still nice and rich. My yam weighed in at 1 lb 6 oz, so I was afraid that it might not all fit in the crust, but it just made a nice deep pie. I used my own crust recipe from Jeff Smith, and it worked beautifully. I did use half white sugar, half brown, and I was out if vanilla (that is a new one for me, lol!), and I added a pinch of ginger for depth. Thanks for sharing, this will be my new standard!

Layered Chicken and Black Bean Enchilada Casserole

This turned out very good although I will admit I screwed it up :0) I forgot to put the second layer of the tortillas in the casseroles and didn't even remember it until we sat down to eat it! The bottom layer of the tortillas pretty much dissolved for us though so I don't know how much of a difference it really made. We were left with more of a chicken mixture and I ended up serving it over rice. I did add a some diced onion while I was cooking the chicken and threw in some corn to the whole mix. The kids loved it though and anytime I get a meal that everyone eats I'm happy with the outcome!

Extra-Easy Spinach Lasagna

Brick-Oven Pizza (Brooklyn Style)

This is the pizza dough I've been waiting for! I've tried lots, and this is the "keeper". I have to admit that I let my bread machine do the kneading, then form it into a ball, coat it with olive oil, and pick up the recipe at step 2. (By the way, I've made the dough as far in advance as 36 hours and kept it in the fridge, with fine results; in fact, I think the crust flavor was better the longer it sat.) Because I don't have a pizza peel (maybe for Christmas?) I used a well-oiled pizza pan (without a "lip" on it and let the crust par-bake for 5 minutes, before sliding it off the pan onto the hot rack. Worked great! (I have a gas oven that does, in fact, go up to 550.) Now, onto the toppings...! I just could *not* figure out what our favorite restaurant was using for their pizza sauce, but I loved it. Apparently, it was just as this recipe describes - no sauce at all, just the cheese, crushed tomatoes, pepper, oregano, oil, and basil. Don't mess with it :-)

Impossible Pumpkin Pie II

This is a good basic pie alternative, especially if you're not a huge fan of crust. I used lowfat Bisquick, fat free evaporated milk, and substituted Splenda for 1/2 of the sugar, reducing the calories and fat significantly (helpful if anyone in your family is diabetic or watching their calories or sugars). Next time, I will experiment with adding orange extract in addition to (or to replace half of) the vanilla. I think it would also be great with pecans either added to the "batter" or sprinkled atop the pie. This basic recipe is replacing the traditional recipe with crust, for me!
