Thai Curry Tofu

Having only been cooking tofu for about a year, I was having a hard time figuring out how to prepare a tofu dish in which you didn't taste the somewhat nutty, bland flavor of tofu (I'm not a big fan). Well, this is it! I made slight modifications: I added a green pepper (cubed), used about 10 green onions rather than one small regular onion, omitted the cilantro, used about 3 tsp red curry paste rather than powder, and added about 1 1/2 tbsp of soy sauce. (Also used reduced fat coconut milk, and then added a little corn starch/water to thicken it up a bit.) Served over jasmine rice, and I believe I may never have tofu any other way again!

Taco Tot Casserole

This is just a twist on the old tator tot casserole favorite, my family seems to prefer this one over the classic. It's great for a quick supper every now and again!

Final Exam Brownies

I'm not a big brownie person, but these were AWESOME. I loved that the mini marshmallows created a crunchy gooeyness around the edges and in the top. SOOOOO good!

Jalapeno Chicken II

This is really tasty and pretty easy to make. I would suggest partially cooking the pepper before assembling this, it still had a raw texture. Very good though.

This was a great dish, very easy, and VERY tasty! I didn't want to buy a whole bottle of honey mustard dressing(we don't eat it often enough) so I just mixed about 1/4 cup dijon with about 2 tablespoons of honey. It was great!

Slow Cooker Casserole

Very good! Great easy recipe for rushed days, simple and down home comfort food. I used spaghetti noodles instead of Ramen (all I had) and seasoned with Johnny's Salt, garlic powder and ground pepper. Also topped with crushed leftover Tim's Cascade Jalapeno Chips before putting in oven. Will make this agian, thanks for the recipe Sue.

Super-Delicious Zuppa Toscana

We loved this soup! Thank you for a wonderful recipe; simple and yet delicious. I did not have heavy cream, but sour cream worked perfectly. And while there was no cheese in the recipe, we couldn't resist the addition of some shredded pepper jack and cheddar. Will be making this soup again for sure!

I love making these they are super yummy and are a great treat to bring around work during the holiday season. This recipe makes A LOT though so be careful if you don't want these in your fridge for a month cut it in half.

Balsamic Roasted Red Potatoes

These were good but nothing that I would rave about. The first time I made these they really weren't very flavorfull. I made them again but I added extra thyme and rosemary and instead of green onion I used shallots because I like the flavor better. Otherwise these were good and worth making again.

Bruce's Northwest 7-Alarm Chili

This is by far the best chili we have ever made, and it gets better each day it sits in the fridge! (Although, it's never lasted longer than 3 days in our household.) Nothing better for those cold, rainy, windy days of fall in the northwest!
