Stuffed Peppers

It was ok. I used ground turkey instead of the soy protein. My husband liked it, but I'm not much of a fan of green peppers. Plus I didn't find it had much flavor at all.

Southwest Appetizer Cheesecake

Abalos-Style Hamburger Soup (Picadillo Filipino)

I didn't really care for this. It's pretty salty, and yes, not draining the ground beef makes it a bit fatty. I added cilantro because I had it on hand, but I don't think it made much difference.

Auntie's Buttermilk Cake

I have been eating this cake all week, and I honestly think it gets even better as it sits! The only changes I made were to use butter instead of shortening, and I also added at least 1/4 c more buttermilk, because my batter was so thick before folding in the egg whites. I also had to bake it longer. Turned out perfect, though! I spread a thin glaze with buttermilk, vanilla, powdered sugar and butter over the top. Delish!

Better Than Sex Cake I

Very good! I mixed the fudge topping and the sweetened condensed milk together and poured them both over the warm cake and it turned out great. Very rich though, I wasn't able to finish my piece.

Persimmon Cookies II

Wasn't crazy about persimmons, but when you're in California and someone picks them off their tree and gives them to you, you've gotta try something! And glad I did - they make great cookies and this was a terrific recipe. Very cake-like. Only difference I made, was used whole-wheat flour, and crushed almonds, because that's what I had on hand.

Louisiana Sweet Potato Pancakes

Soft Oatmeal Raisin Cookies

Used 1/2 c oat flour & 1/2 c wheat flour. Omitted butter buds and vanilla. Used 1 whole egg, and added 1 tsp cinnamon. Mostly, because I am away from my home, and this is what I had on hand. About 11 minutes. Very good warm. Thanks for the tip re refrigeration. I would rate a 5, but need to see how they taste tomorrow.

Bread Bowls

Fantastic, good volume, very tasty, a little sweet so if you are looking for a sour dough you may want to alter the sugar a bit but I loved em. Next time I plan on trying some egg white on top to give it a different look.

Super Bowl Bread Bowls

Taste was great, texture was so-so. Would be great for sandwiches however they are a poor bread bowl. I went through 2 batches working with the recipe trying to figure out why things were so flat. Turns out there needs to be around 1.5-2 cups more flour to get the shape for a bread bowl. I ended up using another recipe almost exactly the same that made 8 breadbowls but used 2 more cups of flour and 3/4 stick more butter.

Mexican Atole

It's a rainy, cold morning here, so I decided to try this. My first sip: Yum! And different. I halved the recipe, using about 1 3/4 c water and 3/4 c milk. I also used regular brown sugar, since I didn't have piloncillo. And then, while the mix was simmering, I added a small handful of chocolate chips! Pretty tasty! Just be sure to watch the mixture, because it will boil over if the heat is too high. Had to keep a strict eye on mine and keep stirring with a whisk. And I think.... if it takes a half hour for the mixture to come to a boil for you, there might be something wrong with your stove! :)

Angela's Awesome Enchiladas

We LOVED these!!! Thank you so much for the recipe. I have tried 3-4 other enchilada recipes that I've never wanted to make again because they were just 'ok'. These were awesome, just as the name says!! I didn't even use the green onion or black olives, which we love, but just didn't have on hand. I also used 1/2 the cheese called for, because that's all we had. And they still tasted great. My husband even loved them, and he doesn't typically care for sour cream or chunky onions and green chilies...which says a lot. Again, I'm super excited to finally have found a recipe that tastes great, one that I can make for company, and one that we all love. Even my 15 month old was gobbling up the chicken! Thank you!

Easy to Remember Pie Crust

This is the recipe that my grandma has used for years. We usually add a pinch of salt, and I like butter flavored shortening. It doubles nicely for a two crust recipe (ie: apple or cherry)
