Toad In a Hole

Easy and delicious. I've been making these since I was a kid myself. We always referred to them as Eggs in a Nest. I prefer to omit the cheese.

Mexican Pizza I

Delicious! I used Azteca taco salad shells and just cut them in half, laid them flat, and baked as directed for my top and bottom. A lot less work and DELICIOUS! Will definitely make again.

Swiss Chicken Casserole II

With a few changes, I might make it again. First, I cut the chicken into bite sized pieces. Next, you need about 2 times the amount of sauce it calls for. I followed other suggestions and substituted 1/2 the milk with sherry. If you double the sauce, only put it about 1/4 cup sherry total or it's a little overwhelming. Use milk for the rest as called for. I also doubled the stuffing mixture which I thought was the best part, so I didn't want to skimp on that! Pretty good after the changes. Hubby loved it. (Note to myself, use 4-6 pieces of chicken cut up into bite sized pieces.)

The cooking time is definitely too long, but even if it were reduced, this is just an "okay" recipe...not a bad meal by any means, but not necessarily one I'd add to my rotation either.

Flourless Peanut Butter Cookies

Best PB cookies ever. Its the only PB cookies I make now. I do change it up a little. I do 1 cup PB, 1 egg, 1/2-1 tsp. vanilla, and 1/2 cup white sugar and 1/4 brown sugar. Wish I could share them with my 2 year old but she is allergic to peanut butter.

Barb's Broccoli-Cauliflower Salad

My uncle used to make something similar to this every Thanksgiving and it was always a hit and gone with in minutes. I omit the bacon, red onion, and sunflower seeds (his recipe didn't have them) and add bit sized chunks of cheddar cheese,after that its tastes exactly the same!

Delicious Ham and Potato Soup

Great soup! My only piece of advice is to cut up a ham steak don't use pre-diced ham it kinda gets rubbery. Great with cheddar cheese on top!

Chicken Pot Pie IX

A family favorite in our house! The only thing I really change is I add 1 diced potato to the chicken, carrots, peas, and celery and boil all that for 15 minutes. Its ok if potatoes are a little under cooked because they will finish while cooking in the oven.

Pumpkin Turkey Chili

Oh my gosh. Probably my favorite chili recipe ever (after I doctored it). The recipe by its self is too bland. I added a ton more chili powder, salt and pepper, and I also added cumin and little coriander. Very yummy. The pumpkin gives it a nice rich hearty flavor!

Country Apple Dumplings

Oh my god these are sooooo good!! I was a little worried about adding the Mountain Dew but don't be these are so wonderful! I did halve recipes since its just me and my husband and I added a little more cinnamon. But even my hubby who isn't a fan of apples loved it!
