Yummy Bok Choy Salad

I about halfed the dressing recipe, eyeballing it. I cut down the sugar too. It was enough dressing after everything was tossed, just enough flavor without everything being drenched. I also just chopped some raw almonds and crushed ramen noodles in it instead of the chow mein noodles. Yum!

Butternut Squash, Apple, Onion Au Gratin

YUM! I know what's going to be on our Thanksgiving table! I am vegetarian, so this is what I did. 1 butternut squash, peeled and cubed (I just used one of the small ones from last co-op pickup, about half the size of a conventional one) 1/2 red onion, diced 1 apple, diced 1/4 C flour 1 cup of water with one vegetable bouillon cube dissolved in it 3 strips of veggie bacon, cooked and crumbled 2 slices of sharp cheddar cheese, chopped salt itty bitty dash of cinnamon I baked at 350 in my Pampered Chef Mini Baker (stoneware) until the squash was tender, stirring once. Paired great with my curry dish too! So colorful using the red onion!

Flourless Peanut Butter Cookies

For sure they would be way too sweet using the sugar called for. Especially if you use un-natural peanut butter. I used about 1/3 C brown sugar and 1/4 white and it was really sweet still. I used natural peanut butter, a dash of pure vanilla, and a T of rice flour. I put a mini reeses on each one (I made it into about 28 small balls) and baked for the 8 minutes. Not bad for low carb!

Quick and Easy Falafel Salad

I thought this was great! I fried my falafel in my Presto Cool Daddy for a minute, I made little ones. I used what I had on hand: green bell pepper, baby carrots, roma tomatoes, celery, and yellow onion. I used probably less than half of the ranch with the garlic pwdr, onion pwdr, and cumin. Tossed it with the veggies, put the falafel on top. Served that over the only lettuce I had left, iceberg. I used maybe a 1/4 of the head. Yummy!!

Fresh Blueberry Pie II

I found a sale on fresh blueberries..3.99 for 2 whole pounds?!? I got 6lbs total. Not wanting to waste the whole idea of fresh blueberries and taint the health factor too...I came across this recipe which allowed me to enjoy my fresh blueberries along with this SUPER easy and tasty recipe! I was impressed. I usually tweak every recipe I use, but I didn't do anything to this one and it was great. I did have really sweet blueberries so next time I might increase lemon and/or reduce sugar. SO YUMMY!

Cabbage Fat-Burning Soup

This is a good version of the fat burning cabbage soup. Although it is not the original recipe it is tasty. I added 3 bay leaves and thats about it. I think tomarrow I will add some green enchilada sauce and green chilies for a flavor variation.

Beet Salad with Goat Cheese

How YUMMY! I had some beets going to go bad in my refrigerator and everything else on hand except for goat cheese. I just used feta and it was amazing! The combination of the candied walnuts, cheese, and the slightly citrus dressing is to die for! I agree that pecans would be good too!

Aunt Edith's Baked Pancake

I thought this was pretty gross. My husband said it wasn't bad if it was smothered in syrup or something. I followed the recipe exactly and it did look cool like the picture. I didn't put the full amount of salt in and it was still WAY too salty. Much too oily for my taste too.

Homemade Bagels

Wow, so delicious...I don't even know if delicious is the right word to use...this bagel recipe is a winner!!! Thanks you, SLYFOXYLADY, for suggesting the molasses. I added 1 TBS to my boiling water but other than that I made no other substitution. These bagels were a HUGE hit this morning for breakfast. Everyone huddle around the toaster impatiently waiting for their turn:)The outside had just the right touch of chewiness while the inside was a beautifully soft dough. Crisped so nicely when toasted!!!!

Wonderful! I had company coming over for dinner and used this recipe at the last minute after my frosting failed to perform! I also used the microwave, threw everything in a pyrex measuring cup and stirred after every 30 seconds until smooth. Yummy!

Perfect Pumpkin Pie

This is a very good pumpkin pie recipe. However, I made some personal changes to make it better! I love a thick creamy texture to it, so I always blend all my ingredients in the blender before filling the pie shell. I cut the sweetness almost in half by using a half a can of condensed milk (or doubling the recipe!) and adding a few tablespoons of sugar. I also cut the nutmeg in half, the ginger down a little bit, and added a bit more cinnamon (I don't like a heavily spiced pie). Delicious!!!

Baked Potato Soup I

I rate this a 4 because I tweeked it a bit. The first time I made this I went by the recipe this time I only used 1/3 flour 1/2 stick of butter(real) and I mashed up some of the potatoes and in order to not make this consistency of and actual baked potato I used almost a whole carton of chix stock on top of the milk I also added seasoned salt. It was perfect after the tweeks and kept better.
