Slow Cooker Chicken and Dumplings

This is a staple in my home. I am making it tonight actually, but no time to use the crock pot since its already 330 so ima make it on the stove. I always through in a packet of dry chix noodle soup mix too.

Brick-Oven Pizza (Brooklyn Style)

My family really enjoyed this pizza, I cooked it as directed but used whole wheat flour. We got a crispy crust on edges but was chewy towards middle of pizza possible due to the whole wheat but I think it was worth it. We made one with thin ham and pineapple, delish!

AWESOME! I replaced 1 of the cups of flour with whole wheat flour, used all honey (hubby not a fan of molasses), and 1/3 cup olive oil in place of the margarine. So light and fluffy!

Oatmeal and Wheat Flour Blueberry Pancakes

Not bad! Used all whole wheat, didn't have milk. Put some chocolate chips in it, along with mixed berries. Very filling! I would probably cut down the oats next time and add more flour. The texture was too much like oatmeal.

Caramel Popcorn

Excellent!! I made 2 batches for an elementary school bake sale. The first batch I made with domino light brown sugar, Perfect. The second batch I had to use my store brand light brown sugar and not as good. Use good ingredients when making this it makes a HUGE difference and use real butter do not skimp and it will be perfect!

Easy Chicken Enchiladas

This is super easy! I needed a meal I could make in 15 minutes flat. I am a vegetarian, so I used a can each of pink and red beans, halved the cream cheese, and added two cut up Chikn patties. Rolled it up, put cheese on top, microwaved it for 4 minutes. Then I cut up tomatoes, olives, and green onions for garnishes. My husband loved it and was out the door in 10 minutes. Thanks!!

Tofu Creamed Spinach

This was good. I could still detect the chalkiness of tofu, but what are you going to expect? It's low fat! It was a wonderful use of silken tofu. I used some hot sauce and chili pepper flakes to give it some depth and tossed it with some pasta. Great!

Miniature Chocolate Eclairs

These are by no means mini eclairs! I made 14 and they were still kinda big. Even after lowering the temp and shortening the baking time, they burned on the bottom. I probably made the slits too deep because they were completely hollow and broke out the bottom when I removed them. I had to fill them upside down! I used vanilla pudding (would have used bavarian creme filling if I had it) and the taste was awesome. I will adjust them and try again!

Yummy Bok Choy Salad

I about halfed the dressing recipe, eyeballing it. I cut down the sugar too. It was enough dressing after everything was tossed, just enough flavor without everything being drenched. I also just chopped some raw almonds and crushed ramen noodles in it instead of the chow mein noodles. Yum!

Butternut Squash, Apple, Onion Au Gratin

YUM! I know what's going to be on our Thanksgiving table! I am vegetarian, so this is what I did. 1 butternut squash, peeled and cubed (I just used one of the small ones from last co-op pickup, about half the size of a conventional one) 1/2 red onion, diced 1 apple, diced 1/4 C flour 1 cup of water with one vegetable bouillon cube dissolved in it 3 strips of veggie bacon, cooked and crumbled 2 slices of sharp cheddar cheese, chopped salt itty bitty dash of cinnamon I baked at 350 in my Pampered Chef Mini Baker (stoneware) until the squash was tender, stirring once. Paired great with my curry dish too! So colorful using the red onion!
