Easy Peach Crisp II

Very tasty. I used 7 fresh organic peaches sliced thin, but I could have added about 4 more and it still would have been great. I also added frozen raspberries. Blueberries would have been good too. Instead of all white flour, I did half whole wheat, half white. Brown sugar could have been added too for a more carmel-y flavor.

Lemon Sorbet

I would suggest doubling the recipe if you are using an ice cream maker. Very flavorful. I zested the lemon instead of dicing the rind. Rinds don't taste good and I think it gave it a better texture. Eat relatively quick because it will freeze hard if in the freezer overnight.

Surprise Apple Salad

A friend of mine made this for a gathering and I just love it. She is like the others that add the pudding mix. Vanilla is definitely the way to go. She didn't add any cream cheese and that kept it lighter and not as heavy. I used fat free cool whip and only 2 snickers bars (which I thought was plenty). I like using granny smith apples to add a little bite.

Black Bean And Corn Salad II

This was awesome! I used mostly fresh lime juice(didn't get enough limes)and fresh cilantro (make sure it's finely chopped). We added a little apple cider vinegar to the leftovers so that it will keep better and to add a different flavor. This is definitely a keeper!!

Fruited Ice Cream

I made strawberry ice cream and it reminded me of Breyers. I would suggest mixing the ingredients in a bowl and then chill for at least 1 hour (if not 4)before using the ice cream maker. The cooler you get all tools and ingredients, the less ice crystals you will have leaving you with a creamier product.

Amy's Cilantro Cream Sauce

Very tasty. We had a bbq and couldn't get enough of the stuff. I used cilantro fresh from the garden. Yummy. Instead of tomatillo salsa, I substituted my husband's fresh tomato salsa. Maybe made it better?

The Real Mojito

Picked some mint from my neighbors yard and mashed it in a bowl with an ice cream scoop. Used the simple syrup technique. The only problem was I didn't make enough (and I increased the recipe to 6 servings!)

Moroccan Cooked Pepper Salad

Deb's Scallops Florentine

This was delicious. Skipped step #2 altogether and the scallops were cooked perfectly. Used only a smidge of mozzerella. Cooked 12 minutes at recommended temp and then broiled on low for 3 minutes.
