Big Soft Ginger Cookies

These cookies are amazing! I've made them numerous times and everyone loves them. Sometimes I serve them with pumpkin dip and that seems to be a big hit.

Brazilian White Rice

This is the only way I make rice now. The only change I make is to use chicken broth instead of water. Be sure not to take the lid off of the rice while it's cooking. let it cook 20 minutes than turn it off and let it sit for a few. Sometimes when I'm making stir fry I stir in some minced or ground ginger into this at the end. Mmmm mmmm!

Asian Orange Chicken

Baked Teriyaki Chicken

This is delicious! Only problem is the sauce did not stay on the chicken. I just spooned it over my chicken and rice after it was cooked. I might try this as a marinade.

The Best Vegetarian Chili in the World

I love this recipe. I've made it several times and even meat eaters fall in love with it. If it's too hot cut down on the jalepeno not the chili powder. I omit the "beef" crumbles and add portobello mushrooms. They add such a meaty texture and flavor. Sooooo good!

Absolutely Fabulous Greek/House Dressing

I absolutely love this stuff. It's all I use on my salad, pasta salad and as a marinade. I do equal parts of vinegar and olive oil and I also use honey dijon mustard. Thanks so much for a great recipe.

Easy OREO Truffles

I love these! They are sooo good. A friend of mine made them around Christmas time and called them "Reindeer Poop." :) I have made them a few times and always use chocolate flavored Almond Bark I find it works a lot better.

Seven Layer Tortilla Pie

This turned out awesome. I used fat free refried beans, added a can of corn, used rotel in place of tomatoes and added a can of green chilis. Sooo good. The only thing I'll change next time is to use maybe a can and a half of refried beans instead of two whole cans.

Quick and Easy Brownies

Sooo good! I used 1 cup of white sugar, 1/2 cup of brown sugar, 2 eggs, 1 cup of flour and (this may sound strange)I replaced 1/2 of the butter with pureed avocado. It cuts the fat by 35% and makes them ridiculously fudgy and moist. You can't even tell.

Danish Potato Soup

Great soup! I was looking for a good alternative to ham and beans and split pea soup and this is it! My husband thinks it is the greatest soup. I like to add more veggies to my soup than is called for.

Pumpkin Bread IV

I make a very similar recipe to this one every year around Thanksgiving and Christmas. You add a bag of mini chocolate chips though and it's wonderful. I have a friend who asks me for this every year for her birthday.

Cheesecake Supreme
