Golden Chicken Nuggets

Reviewed: May 14, 2008
I used chicken tenders and increased the bake time by about 10 minutes. I omitted the butter as well and it was still fine. To make it a little crispier, I put it under the broiler for a few minutes. I had added garlic powder to the mix but the flavor was still a little bland. But overall a very decent recipe.

Kathy's Delicious Whole Slow Cooker Chicken

Reviewed: May 14, 2008
My family LOVED this chicken. I especially loved that there was no guess work. I like to buy whole chicken because it's so much cheaper but my biggest fear with preparing it is giving everyone food poisoning because there is such a fine line between perfectly baked and totally dried out. With the slow cooker I didn't have to worry about it drying out. I put it on low at 11 and by 4:30 it was falling off the bone. I marinated it overnight and the soy flavor was INTENSE throughout the bird. I actually prepared the chicken several days ago but I shredded the leftovers, put them in baggies of meal size portions, and stuck them in the freezer. I used a baggie of shredded chicken for dinner tonight in a quick skillet meal. The flavor was so enhanced by the chicken that it tasted like it took me hours when I really only spent 15 minutes tossing things together. I'm glad I tried this one!!

Rice Cereal Energy Bars

Reviewed: May 14, 2008
I sent these to my honey in Iraq, and the guys LOVED them!!! They travel very well, and I made some minor changes...replaced the chocolate chips with M&M's (with 108 degree heat over there, they hold up MUCH better!!), and I used dried mixed berries and dried apples - coarsely chopped, used honey and corn syrup, but left the sugar, and no sesame seeds...had a hard time mixing but I thin the PB mixture needs to be reallllly hot for it to work. Smashed into a 9x13 pan, then chilled in the freezer before cutting into bars. Wrapped in foil, then plastic baggies, and away they went! That was a week ago, and they already "need" more!

Easy Enchilada Casserole

Reviewed: May 14, 2008
This was a great recipe. Kind of like Mexican lasagna. I made the following changes based upon the previous reviews: 1. cut chicken breasts up into bite size pieces, then saute in a little olive oil, with some cumin and chili pepper (yum, this was a surprise) 2. cooked casserole entire time uncovered 3. added half can black beans to chickent mixture-very pretty and liked the texture 4. substituted corn chips for middle layer of tortillas-not sure if this mattered 5. went low fat on soup and sour cream This was a great "comfort" food recipe!

Fried Pork Chop

Reviewed: May 13, 2008
This was a good basic recipe. I added lots of seasoning to the flour (garlic powder, onion powder and cajun seasoning). It still seemed sort of bland though still good with some BBQ sauce on the side. I may still use this again since it was very simple and fast. Thanks!

Beefy Baked Ravioli

Reviewed: May 13, 2008
This was pretty good. I didn't use a big enough pan so it bubbled over quite a bit! I also added garlic and mushrooms to the meat as it browned. I used the whole package of ravioli as well. My kids only ate the ravioli so it seemed pointless to use the rest of the ingredients. But I thought it tasted good.

Apple Breakfast Bread

Reviewed: May 13, 2008
This is pretty good, I used half butter and half applesauce, and it turned out quite moist still. I was short on apples, but it still tastes good and I will probably make it again. It's great for a quick breakfast on the run!

This recipe was good but not excellent. It didn't really stand out. My family enjoyed it and I would make it again but I think there might be better fried chicken recipes out there....if you find one...let me know!

Deep Fried Oreos®

Reviewed: May 12, 2008
I fixed these last night and they were pretty good. They had a funnel cake taste to them. One thing is they have to be eaten right away when they are still warm. They were not very good once they cooled. I would still fix them again.

Absolutely delish. Everyone loves it! A new bag of coconut flakes makes it extra moist. Ditto for the pineapple.

Easy Baked Chicken

Reviewed: May 13, 2008
This was just ok. No one in this house really likes French dressing so we changed it to Thousand Island. And I used others' advice about using bread crumbs. The breading came out decent on top but soggy on bottom. The flavor was pretty bland even though I used seasoned bread crumbs. If I try this again I will increase the heat and add extra seasonings to the bread crumbs (garlic, onion, cajun...anything) Thanks for a new one to at least try out...

Marinated Baked Pork Chops

Reviewed: May 12, 2008
I thought that these were just ok but since the rest of the family enjoyed them I will give it four stars. They still turned out too dry for my taste, and I covered them for the first 30 minutes. But overall the taste was good. I may try this again and leave it covered a little longer. Thanks...

Easy Meatloaf

Reviewed: May 11, 2008
To me, it's hard to make a bad meatloaf, although I suppose plenty have tried. I followed other reviewers' suggestions and added garlic, oregano, parsley and worchestershire sauce. I did not, however, find it too wet when finally all well mixed. The sauce on top was a little too sweet for me, but not enough to ruin this dish. I think a good alternative would be to use hoisin sauce instead of the sugar to add a little more tang and little less sweet.
