Fresh Cranberry Relish

Made some mods - used only 1 apple, added some chopped celery and walnuts. I also dissolved 1 pkg cherry jello in 1 c of the drained juice. Wanted to add some more red color.

Fish Tacos with Honey-Cumin Cilantro Slaw and Chipotle Mayo

These were delicious! I followed the recipe and they came out perfect. The only thing I did differently was I served them on a hard tostada shell which gave them even more crunch. I will be making these time and time again.

Downeast Maine Pumpkin Bread

I make this bread quite often. I usually make this recipe with a few modifications. I use 1.5 cans pumpkin puree and lower the oil to about 3/4 C. I also reduce the sugar to 3/4 C (personal preference, but it is good with the full amount too), and substitue allspice rather than using cloves and ginger (because that is how my mother made it growing up). So very very very good. Also, I have made this with whole wheat PASTRY flour and it turns out well (but not so much with just normal whole wheat flour - I've tried!).

Tater Tot Casserole IV

A tasty version of this popular casserole...I usually add grated cheddar cheese to the top about ten minutes before I remove it from the oven. My four-year old daughter loves it!

Apple Pumpkin Muffins

FANTASTIC! These are delicious. The only chnge that I made was to the apples. I used apple pie filling instead. I did chop the apple pie filling into much smaller pieces before adding it to the batter. These are delicious, especially with the Cinnamon Honey Butter off this site. Will make again..soon!

Apple Pie by Grandma Ople

The first time I made this pie, I was deliciously amazed at how good it was. This is definitely a keeper. The first few times I made this I followed the recipe to a "t" and it was great. If you like a little spice to your apple pie, add some cinnamon and cloves. I always do now...and sprinkle some cinnamon sugar on top. Delish!

Mulligatawny Soup I

Yum! I loved this. I left the cream out of mine, but added a tbsp. of whole milk to my toddler's bowl. I also pureed hers (as I do with most of her soups; as this gets her to eat them better!) I did add more curry at the end, probabably an extra tsp. I also used brown rice. Next time, I will add a little more chicken, and maybe a touch of cinnamon!

Shrimp Enchiladas Suizas

This tasted fine but it didn't look very appetizing on the plate. It did not look like enchiladas but more of a casserole. Again, tasted fine but was disappointing for all of the money and hard work that went into it. Also, it takes WAY longer to prepare than stated so keep that in mind if you make it.

Spicy Southwestern Slaw

Creamy Chorizo and Chicken Soup

Wheat Crackers

I followed this recipe excactly, and these were absolutely excellent! To me, they tasted just almost like wheat thins, but without all the un-needed additives. I will make this over and over again! Thank you! Update: Made a second batch and added some brown sugar and cinnamon. Fabulous!
