Pizza Salad II

I made this with a few alterations for a potluck at my work. I added yellow bell pepper to the green and red, added a cucumber, used a red onion rather than green onions, added green olives to the black olives, omitted the mushrooms and mozzarella, and probably used more than 2 tbsp of parmesan cheese. Everyone at work raved over this salad - there were no leftovers. I'm sure that I'll be asked to bring it again.

Broccoli Rice Casserole

I brought this to a potluck at my work. Personally, I did not care for it. However, several people told me that it was good, and three asked to take home the leftovers to eat later that night, and I take that as a pretty good thing.

Baked Salmon II

This was a great recipe! I am always looking for new ways to make salmon and this was delicious. I served over brown rice. The only thing I would do different is use less salt.

Charley's Slow Cooker Mexican Style Meat

Chicken Wild Rice Soup

This soup is delicious! To cook the chicken, I boiled four breasts with a whole onion, quartered, 3 cloves of garlic, 2 celery stalks, and salt and pepper. I also added poultry seasoning and used half and half in place of the cream of mushroom soup. Turned out thick and creamy- just perfect!

Chunky Chicken Noodle Soup

Excellent! I used more veggies and broth and also used frozen egg noodles along with some frozen peas but all in all this was a great base recipe for comforting chicken noodle soup. Quick and easy and I will make often. Thank you!

Chipotle Shrimp Tacos

Great recipe! I made a few adjustments but all in all I folowed it exactly and have no complaints. I baked the bacon in the oven, used the grease for the shrimp and then crumbled the crisp bacon over the top of the tacos. This one has endless possibilities. Thanks for the great recipe!

These were delicious! I followed the recipe and they came out perfect. The only thing I did differently was I served them on a hard tostada shell which gave them even more crunch. I will be making these time and time again.

Downeast Maine Pumpkin Bread

I make this bread quite often. I usually make this recipe with a few modifications. I use 1.5 cans pumpkin puree and lower the oil to about 3/4 C. I also reduce the sugar to 3/4 C (personal preference, but it is good with the full amount too), and substitue allspice rather than using cloves and ginger (because that is how my mother made it growing up). So very very very good. Also, I have made this with whole wheat PASTRY flour and it turns out well (but not so much with just normal whole wheat flour - I've tried!).

Tater Tot Casserole IV

Apple Pumpkin Muffins

FANTASTIC! These are delicious. The only chnge that I made was to the apples. I used apple pie filling instead. I did chop the apple pie filling into much smaller pieces before adding it to the batter. These are delicious, especially with the Cinnamon Honey Butter off this site. Will make again..soon!

Mulligatawny Soup I

Yum! I loved this. I left the cream out of mine, but added a tbsp. of whole milk to my toddler's bowl. I also pureed hers (as I do with most of her soups; as this gets her to eat them better!) I did add more curry at the end, probabably an extra tsp. I also used brown rice. Next time, I will add a little more chicken, and maybe a touch of cinnamon!

Shrimp Enchiladas Suizas

This tasted fine but it didn't look very appetizing on the plate. It did not look like enchiladas but more of a casserole. Again, tasted fine but was disappointing for all of the money and hard work that went into it. Also, it takes WAY longer to prepare than stated so keep that in mind if you make it.
