Quick Yeast Rolls

I loved these rolls! I've had a hard time with other recipes getting my rolls to raise and be fluffy. These plumped right up. I was a little worried at first with how sticky the batter was, but I went ahead and spooned the dough into the muffin pan and they turned out great, and huge! I finally found a recipe I can make!

Molasses Sugar Cookies

Great cookies and so easy to make! I love the molasses flavor in them, perfect amount for me. The other spices blended in well too. I made my cookies a little smaller and got 8 dozen. I will be making these for a long time!

Peppermint Meringues

These meringues were a little difficult. I followed the recipe and only made 20, so I had to make another batch. Also they are a little blan, some peppermint oil needs to be added or chocolate chips. I baked the first batch 1hr and 15 min and they got too brown, so I only cooked my 2nd batch an hour and they were a little better.

Cinnamon Honey Butter

WONDERFUL! The only thing I measured was the butter (since it comes in sticks!) but the combination was incredible. If guessing, I would say I used about 1/4 c. powdered sugar and 1/4 c. honey. I just sprinkled in the cinnamon until I liked the color. I whipped this for several minutes in my stand mixer. It was FABULOUS on top of the apple strudel muffins on this site. Thanks for the recipe!

Home Style Macaroni and Cheese

I really liked this mac and cheese. I doubled the amount of noodles per other reviewers, but I think next time I will use 3/4 lb of macaroni instead of 1 lb. Once baked, while delicious, it really wasn't creamy anymore, and I like my noodles saucy! I used shredded sharp cheddar for the sauce and it was wonderful! Once in the pan, I sprinkled a small amount of mild cheddar on top, then topped that with 1/2 c. Italian bread crumbs (blended with 1 T. butter). Baked for 18 minutes and it was golden brown and TASTY! Great recipe, thanks for sharing!

Apple Strudel Muffins

These muffins are INCREDIBLE! I am 5 months pregnant, and I just found my new craving!!! We added about 2 1/2 cups of granny smith apples with the peel, most in very fine pieces, though we left about 1/2 c. of bigger chunks. I also added some cinnamon to the batter. I had just turned my oven down from baking something at 400 degrees, so they baked in 17 minutes and were perfectly done. I made the cinnamon honey butter recipe (from this site) to top these, but they didn't need it - the butter just made them more decadent! I served these with BBQed pork out of the crock pot, coleslaw, and baked macaroni and cheese. A HEAVENLY MEAL!!!

Toads in the Hole II

We wanted to make something different for St. Patrick's Day, so we tried this because I found a similar recipe on an Irish website but didn't want to do the metric conversions. We wrapped our sausages in bacon and put in the oven at 425 for 20 minutes with a little olive oil. After 20 minutes, we added the batter and baked for an additional 35 minutes. I was disappointed in the breading as it didn't have much flavor. The sausage, however, was excellent. I just wish this dish had more zing.

Irresistible Irish Soda Bread

Mum's Irish Apple Pie

I made this pie for St. Patrick's Day, and while I found the crust a little difficult to work with, it was very flaky and tasty, which I liked. I baked the pie for 45 min exactly, and I thought it was done, but when I cut into it about an hour later, there was a lot of moisture in the bottom. It probably could have cooked a little while longer. The apples were also a little crisp, but I like it when there's a little "bite" for the texture. Overall, pretty good.

Green Grog

This was an excellent cocktail! We halved this recipe and it was a big hit! One person with us is pregnant and so couldn't have the rum, so we separated hers out from ours and she liked it as well. We did not measure the rum, we just started adding and stopped when we thought we had the proper amount. :) Also, we waited until St. Patrick's Day to go shopping, so there was no lime sherbet left by the time time we got there. We used rainbow sherbet and still loved this. It did turn a strange color, but I still went to bed feeling very happy! Affordable, easy, and delicious!

Remoulade Sauce a la New Orleans

Slow Cooker Reuben Dip

My husband loved this. I don't eat sauerkraut, but everyone who typically enjoys reubens seemed to like this. I used sliced corned beef and just cut it up. It did great as an appetizer in the crock pot for my daughter's 1st birthday party.

Cheesy Catfish

This was pretty good. I omitted the flour and the milk. I seasoned my egg with salt and pepper and I used Italian bread crumbs mixed with garlic powder, parmesan cheese, and Caribbean jerk to spice it up. I put the catfish in the egg and then covered it with the breadcrumb mixture. I put 1 1/2 T melted butter over my two fillets. I baked them at 350 for 18 minutes and then under the broiler for 4 minutes (I did each side of the fish for two minutes). It was pretty good. I squeezed lemon on mine and that added good flavor. I thought it tasted more like chicken than fish, which was good. A nice way to get good-for-you fish without tasting fishy.

Turtle Cheesecake

A great cheesecake... with some modifications to suit the taste of my friends. First, I made this crust out of oreos - I think it fits better. I think the chocolate cheesecake would be overwhelming, so I mixed the chocolate with a little bit of the cheescake batter and swirled it throughout the plain batter. I did the same thing with some of the caramel, so when we cut into the cheesecake, you could see the chocolate and caramel ribbons without overpowering the cheesecake. I did put in the layer of caramel and pecans, and it was excellent! I always bake my cheesecakes in a springform pan fit inside one of those silicone cake pans, then place the cheesecake in a roasting pan and put water halfway up the side of the cheesecake pan. This has always worked well for me - I get the benefits of a waterbath without the leaking that foil can do. Before I boxed it up to take to work, I used some Smuckers hot fudge topping to cover the top of the cake in a very thin layer, then placed pecan halves around. Finally, I drizzled what was left of the caramel sauce on top of this cake. It looked beatuiful! I am known for my cheesecakes, and my coworkers were quite impressed. Try this one - you won't be disappointed@

The Best Sweet and Sour Meatballs

I liked these. I thought the sauce was a little too thin, so I added some cornstarch, which still didn't quite get to my idea of "saucy," it was more "brothy." I liked the taste though, and the next day ate the leftovers with rice- definitely better overnight. Thanks!
