Mexican Pizza I

Delicious! I used Azteca taco salad shells and just cut them in half, laid them flat, and baked as directed for my top and bottom. A lot less work and DELICIOUS! Will definitely make again.

Swiss Chicken Casserole II

With a few changes, I might make it again. First, I cut the chicken into bite sized pieces. Next, you need about 2 times the amount of sauce it calls for. I followed other suggestions and substituted 1/2 the milk with sherry. If you double the sauce, only put it about 1/4 cup sherry total or it's a little overwhelming. Use milk for the rest as called for. I also doubled the stuffing mixture which I thought was the best part, so I didn't want to skimp on that! Pretty good after the changes. Hubby loved it. (Note to myself, use 4-6 pieces of chicken cut up into bite sized pieces.)

Country Quiche

The cooking time is definitely too long, but even if it were reduced, this is just an "okay" recipe...not a bad meal by any means, but not necessarily one I'd add to my rotation either.
