Sausage and Sauerkraut Casserole

This was AWESOME! I used more cheese & topped it with cheese. I also doubled the recipe and made it in a 9x13. After one night, it's practically gone! I was a little dubious because I haven't seen these ingredients used together before, but it's definitely a keeper. My husband and kids loved it, too!

Easy Paella

Very spicy; if I make this again I will cut down on the chicken marinade and cut the red pepper for the rice in half. It was delicious, but my husband didn't finish his because it was so hot. Also, this made a huge quantity of meat compared to the amount of rice. For future, will cut meat quantities in half.

Chantal's New York Cheesecake

PERFECT! NO CHANGES NECESSARY! Makes lots of batter - fills a 9" pan almost all the way up. Still cooks perfectly. Serve with fruit. I tried serving with chocolate, but chocolate and other candy toppings probably need a denser cheesecake - this one is less dense than most.

No Bake Chocolate Oat Bars

Really good! I was able to put this is an 8x10 dish and get more servings without doubling recipe. I did NOT change the butter and I thought they were perfect. The chocolate & peanut butter layer was a bit thick (even in the larger dish), so I might that cut down next time but AWESOME nevertheless.

Beef and Bean Chimichangas

I had extra meat and cheese leftover after filling the burritos and spread it on top before baking - so these were more like Burritos Enchilada Style rather than Chimichangas, but DELICIOUS nevertheless.

Avocado Tzatziki

I used ground red pepper instead of the red pepper flakes to distribute the flavor better. I omitted fresh mint because I didn't have any and omitted the cucumber because that sounded a little different. I use the recipe every time I serve lamb, gyros, etc. and it is always loved. 5 star!

Moroccan Lamb Kabobs

WOW! I did everything just like the recipe said and didn't omit any ingredients. Also, I recommend PEPPY'S PITA BREAD recipe to serve these kabobs in and the AVOCADO TZITZIKI SAUCE recipe. I would give this a 6 star if they had it.

Fabulous! I felt like a true chef! Don't be afraid to put these in a Zip Loc bag after taking them out of the oven. If you don't, they will be more like crackers than pita bread.

Tortilla Espanola

I used Ole Ida's cubed hashbrowns O'Brian style (seasoned with red and green bell peppers and onions). This was much faster and great tasting! Added shredded cheese. FABULOUS! This is now one of my favorite recipes. At first I thought that the potatoes were a little weird, but they really balance the flavor of the spicy chorizo. This is a great way to impress people with your broad scope of Mexican cuisine. It's like thinking outside the box!

I added 1 c. parmesan, 1 tsp. black pepper, 1 tsp. garlic salt, and 1 c. sour cream (in place of one of the cups of milk). I thought it turned out much better, with more flavor... but it still lacks that "WOW" factor.

It was very good, but not as spicy as we would have liked (hence not a 5). I addwd a can of black beans & a small can of green chilis. We topped it with shredded Cheddar & Pepper Jack cheeses. If you cover the pot during the 20-30 minute simmer you shouldn't need extra broth.
