Yam and Apple Casserole

This was really good, but the sweet potatoes were a bit lost in the apples & sauce.

Lemon Blueberry Drop Scones

Reviewed: Nov. 13, 2007
I loved this...yes they aren't typical dense/dry scones, however, they are still amazing! They are just different...I love the idea of dropping them instead of shaping them out and that whole process. I'm a huge scone baker and have tons of recipes. This one I will definitely make again! (we used chopped fresh strawberries instead of blueberries...the lemon flavor was GREAT!)

BUSH'S® Black Bean and Cheese Lettuce Wraps

Reviewed: Nov. 13, 2007
These felt so healthy to eat and I'm a huge fan of lettuce wraps. I think the Italian dressing was TOO much. Instead, next time I think i'll just do olive oil. The Feta cheese and the black beans were so good though!

Bacon Asparagus Pizza

Reviewed: Nov. 13, 2007
My husband loved this, but I guess i'm not a fan of goat cheese. It kinda threw me off. I also used canned asparagus b/c fresh was SO expensive...it wasn't the best idea. Over all, it was pretty expensive to make (asparagus, goat cheese, crust, etc.)

Banana Bran Muffins

Reviewed: Nov. 13, 2007
I've made this twice and both times was AMAZING!! I did top them with a lot of honey and cinnamon before baking and the second time I subsituted half a cup of flour with half a cup of oatmeal. To do this, just throw the oatmeal in your blender and within a minute or so it turns to powder...it's great!

I added twice the cranberries and no cashews...it tasted great because the chicken I used was grilled and blacked and it really added to the flavor! MMMM...

Slow Cooker Marmalade Curry Chicken

Reviewed: Nov. 9, 2007
This was an awesome recipe!! I'm not a huge fan of rice...so i use a great pasta called Orzo...it looks kinda like rice, but i like the texture much better. I also added a can of coconut milk near the end, which was great! I'll probably use half the cayenne pepper next time...it was too spicey for us. It kinda over powered the other flavors, but over all it was a great dish!! (also i may add more currey next time, it wasn't a very strong flavor. The sweet orange was the best!

Enchiladas

Reviewed: Aug. 26, 2007
I substituted one can enchilada sauce for one can chili, and put that in with the ground beef. I also put in one can mild chopped green chilis and 1/4 cup sour cream. Seasoned beef with cumin, garlic salt, onion powder, and pepper. EXCELLENT! Very fast and easy, too.

Serbian Ground Beef, Veggie, and Potato Bake

Reviewed: Aug. 17, 2007
My husband loved this, but I wasn't crazy about it. It is similar to an American pot roast, but with many more seasonings and the meat is ground instead of a roast. It is baked casserole style. Very spicy.

Nanaimo Bars I

Reviewed: Aug. 8, 2007
I would have given this a 2 star, BUT I know I botched the recipe. I mixed the gramham cracker crumbs in right from the start, not giving the recipe a chance to cook up like a custard, as it directs in the first couple of steps. Apparently this is CRITICAL.

Easy Apple Crisp with Honey

Don't make this too hard! Use a CAN OF APPLE PIE FILLING! Omit lemon juice, and follow all other steps exactly. PERFECT!! I drizzled another 4 Tablespoons of melted butter over top since it didn't look "crumbly" enough. I could eat the whole thing myself!

Sausage and Sauerkraut Casserole

Reviewed: Jul. 11, 2007
This was AWESOME! I used more cheese & topped it with cheese. I also doubled the recipe and made it in a 9x13. After one night, it's practically gone! I was a little dubious because I haven't seen these ingredients used together before, but it's definitely a keeper. My husband and kids loved it, too!
