Truck-Stop Buttermilk Pancakes

The first time I made these, I made only half a batch to see how well it did. It did do well, and kept in the refrigerator overnight for the second day. The second time I made it, I made the entire batch. This was good - it lasts for several days in the fridge for a stress-free fast breakfast.

Easy Pie Crust

This crust was very fast and easy to make. No mess! I liked being able to mix it in the pie dish and press it in from there. I didn't care for the flavor at all, though. Don't try to roll this pie crust out; the consistency is very crumbly, and it just isn't meant to be rolled.

Strawberry Lemon Shortcake

I used the shortcake section of this recipe and quadrupled the recipe (don't forget - this recipe only makes 2 servings unless you change it). I formed a large circle about 3/4 inch thick with the dough. I cut it into wedges, as you would for scones, for a better presentation. I didn't have any lemon zest or lemon flavoring, but these were perfect for shortcake anyway. Good, simple recipe, and the best I've had yet!

Oatmeal Soda Bread

I disliked this bread. Perhaps it was the overall taste; soda bread may just not be for me. It may also be that at 40 minutes, the bread was too far gone to serve to guests. The only thing I can think to say is that if you do love soda bread, using oatmeal is probably a very good idea.

Jim's Pork Chorizo

Added garlic powder, more paprika, omitted cloves. For the future, I will add a pinch ground coriander and 1/4 tsp cumin. I did my research, and this combo was the best pork chorizo recipe I could find. I loved it!! I made a double batch and am freezing it.

Baked Oatmeal I

I added nutmeg and mixed in some walnuts and sliced pears to make this go farther. It turned out great! The pears were an excellent addition, and the nutmeg and walnuts added a lot of flavor.

Chorizo Breakfast Burritos

This is one of my favorites, but you have to do it a certain way - don't mix the eggs and chorizo. Cook separately. Add cubed hasbrowns. Use beef chorizo, not pork chorizo (but pork is OK). You can omit the chile. I LOVE this dish!

Big Al's K.C. Bar-B-Q Sauce

I didn't have molasses, so I substituted honey as a natural sweetener. No liquid smoke, either, but this was STILL a 5 STAR! I can't imagine how good it would have been if I had used these items!

Jalepeno Cheese Dip

I added tomatoes to add a color and taste and did diced green peppers rather than jalapenos. Excellent, but one word of caution: I attempted to make this a one-pot deal. NO CAN DO! You must SHRED the mozzarella and bake as directed. If you do like I did, the melting will be uneven, and you will eventually cook the water out of the mozzarella and end up with one big cheese lump surrounded by water and mayo mixture. Overall, taste superb, but presentation severely lacking due only to my not following the directions by trying to simmer it.

BBQ Meatballs

This is a great, fast, easy recipe for the ingredients and cost. It's no gourmet meatball, but the taste certainly outdoes the prep work and time it takes to make, so I give it a 5 star. The BBQ sauce is up to you, so choose well. That ingredient will make or break your batch.

Blueberry Streusel Muffins

Followed recipe, then added some cinnamon and a bit of nutmeg. Didn't have any blueberries, but used 2 bananas and a cup of blackberries. Excellent! These had great flavor! I was so proud of them; it's a dirty rotten shame I didn't have any company to show them off to! (But it's too late now... they're all gone.)
